Wacky Wednesday

Well today appears to already be off to a good start… the sun is shining, all my schoolwork has been submitted, the birds are chirping, and I have a meeting-packed day… Plus my dad and I are doing lunch today b/c I have an all day meeting tomorrow (expect a post later tonight!)… I think today will be flying by (I hope I didn’t jinx myself)…

For breakfast this morning, I had a slice of baked oatmeal, a Morningstar patty, and two clementines… I love this meal because it is fairly well rounded… veggies, grains, fiber, protein & fruit!

My planned mid morning snack is… yogurt & Kashi… Ahh, I promise this is the last time I will be eating this combination for a while… I am obsessed with this snack, but I know I need to switch it up so I don’t bore you all ;)   For this afternoon’s snack, I have a cup of Amy’s Black Bean soup… I, at first, thought it might be weird to have soup as a snack, but I needed to use this up before it goes bad, since I won’t have a chance to eat it from tomorrow (work lunch) on… plus I’m trying to think outside of the box w/ snacks & meals :D

  1. I love soup as a snack. And I’m in agreement with VeggieGirl; I HAVE to try making that baked oatmeal soon! It looks sooo good.

    Ashley- I love food. Getting bigger portions and having them being more nutritious too is awesome!

    Oooh, that baked oatmeal and the clementines look especially enticing – yum!
