Well, this afternoon the hunger was in full force… I really wish I didn’t have to depend so much on snacks but I realize that when you eat breakfast at 5:45am and you are up until 10pm, I guess I don’t have much of a choice… my blood sugar wins that fight :)

The salad I had for lunch was yummy but I think next time I need to add some fiber or protein to it… I was starving only a couple hours later… I had a Clif mini bar at 2:30… and then at 3:45, the hunger wouldn’t go away so I devoured a Kashi Honey Almond Flax granola bar (even though my intention was to only eat half)… Oh well, at least it was good snacks instead of junk…

Dinner was a quick, makeshift one as well… My family was having Italian hoagies for dinner (my brother moved home from college today so it was a little chaotic in my house), so I decided to make a veggie bruschetta burger… I just picked up Morningstar soy vegan burgers (I believe they’re new) and had it on a whole wheat english muffin… I topped it with bruschetta which totally HIT the spot… This reminded me of a bruschetta burger I had at Applebees a long time ago (inspired by Tyler Florence) ; however, it was much healthier! These “burgers” were definitely better than traditional Morningstar veggie burgers… The last time I had them, I was left with a pile of grease (or something?) surrounding the patty; this time, I don’t know if it’s because of the soy or what, but these came out perfect and grease-free after I cooked it… It was also really hearty, more substantial in size, and pretty flavorful… On the side, I had a serving of whole grain goldfish – yum!

Then I hit the gym for a pretty intense workout… I did 15 minutes of elliptical on a high resistance and then 15 minutes of running on the treadmill… I finished it off with a bunch of lower body weights…

When I got home I was in the mood for a smoothie, so I made two servings for my dad and me using a banana & chocolate whey isolate powder… I also had a 1/2 cup (eyeballed it) of this new Nature’s Path flax plus pumpkin granola I bought the other day… This is totally to die for… mmmm, the pumpkin flavor isn’t too strong but it’s just right: nutty (real pumpkin seeds in the mix), crunchy, and yummy… Plus it’s relatively low calorie for granola (140 cals for 1/2 cup)…

    Jenn ~ Yeah I am the same way, I think we were just made to require snacks!

    Kristie ~ I was going to just put mustard on it but then I saw that in the fridge, I’m glad I combined the two :) LOL, we’ve had these cups FOREVER too!!! They are our “kid” cups, we saved them for when we had little kids over from our fam, they even have lids ha!

    Mmm I really like your idea of topping the burger with bruschetta, good one!

    And that little cup of yours looks JUST like cups I used to have back when I was a lot younger haha. Now I wish I still had them!

    I’m definitely a snacker as well! I hate the feeling of an empty stomach, and it seems that no matter how much I eat at meals, I start grumbling within a few hours!

    The burger and smoothie look delicious! :)

    I’m big on snacking too. I find it keeps my energy nice and stable. And it’s better to eat when you’re hungry, right?
