Grillin’

For dinner tonight, my dad was grilling some filet that we had in the freezer, so I thought what a perfect opportunity to grill some tofu to use for tomorrow’s lunch!

I used the Silken Tofu which I will agree with Kath in that this is a big pain to grill… I actually lost a few yummy pieces to the fire :( I used about 1/4 of the package, brushed it with Siracha sauce and tossed it on the grill… I let it grill for about 2 minutes then flipped and let it grill for another 2 minutes…. and ta-da… a lunch filler was made…

Now, as for dinner… we had a side salad (in which I went dressing-free – a big step for me!), string beans w/ sliced almonds, a sweet potato (but I only ate half b/c it was a giant one), and about 3 oz of filet (I actually probably consumed 2oz of this!)… this was a light but filling dinner and I was proud of my mini milestones with eating salad sans dressing and cutting the potato in half before digging into it…

I, then, hit the gym with my intention to burn 400 calories, since that is one of my goals (to burn 400 calories 5 times a week at least)… wellllll… the gym was packed so I thought maybe I’ll take kickboxing since i haven’t taken a class in a year because my body got SO used to the moves… I brought my 2lb. kickboxing gloves with me and got a good workout in… however the first 40 mins are the most intense and I noticed that I was only at 300… so I skipped the squat session and hit the treadmill… I did that for 15 minutes (running/walking intervals) and then had about 5 mins left (while waiting for my dad & bro to finish up) and did some pull-ups… I looked down at my HRM and 501 caloires had been burned – YAY ME! Honestly, I feel awesome after a tough, sweaty, heart-pumping workout… there is nothing like it to boost your spirits!

I’m slowly but surely dedicated to my “vow”… :)

Today was a fun day… that is a phrase that I don’t typically say on a work day, but since I really only worked for 4.5 hours today and “volunteered” for the other 5, it really was a fun day, despite all the craziness & chaoticness of planning a huge fundraiser, in the long run, it was definitely worth it, knowing that our efforts will directly go back to the American Cancer Society…

At the lunch, I had a sampling of lots of Indian foods… I have a lot of coworkers who are Indian and make fantastic (and spicy) dishes both vegetarian and with chicken… It was an “International lunch” theme so there was everything from cheesesteaks to hoagies to wings to pizza to sushi to chinese to korean to spanish rice&beans to well, you get the idea…I wish I could tell you what all the names of the dishes were, but I’m sure I would definitely mess up the name & spelling!  The highlights of my dabblings in Indian food were a spicy chickpea dish & a dish that was similar to creamed spinach (minus the cream, add tons of spicies)… I also tried a piece of yuca for the first time (reminded me of a potato)… For dessert, I said I wasn’t going to have any, but I just couldn’t resist… however I was choosy with what I had… I had watermelon, honeydew, kiwi, a M&M sugar cookie, and half a slice of a cherry ladyfinger cheesecake (split it with my dad who came over for the event)…

All in all, everything was delicious and well-enjoyed!  We are estimating that we had 220 attendees (which is down from last year’s count of 260), but still a great turnout… The leftovers were being donated to a local food bank, which was an idea from a security guard… I thought that was a fantastic idea!
