So, if you are like me and have a lot of diabetics in your family, this is a great dessert; however, if you’re trying to avoid artificial sweeteners and chemicals, then this is not a great dessert!
I came up with this recipe probably two years ago, when I was obssessed with all things sugar-free & low calorie and needed a recipe for a family cookout that my grandparents (who are diabetics) could enjoy… I have learned over the last year or so, that low sugar products should generally be reserved for those who can’t physically handle the sugar and need to use alternatives like Splenda… Now, I simply use sugar or forgo it all together…
All that being said, I also made this recipe for work functions over the last few years and it has received RAVE reviews so much so that I was actually featured in our company’s corporate cookbook (which actually did span internationally haha) for my easy & yummy recipe…
As a result, for today’s American Cancer Society Fundraiser, I was requested to bring this pie and it was gone within 5 minutes of the lunch starting, despite the fact that I cut it into very tiny slices…
So, without further ado, here’s the recipe:
- 3 serving-sized cups of Dark Chocolate SF Jello Pudding
- 1 tub of Sugar Free Cool-Whip
- 1 12oz jar of natural crunchy peanut butter
- 1 reduced-fat graham cracker crust
I simply combined the pudding with the peanut butter until well-mixed… then gradually stired in the cool-whip until well-mixed… Once everything is mixed well, pour into the graham cracker crust… I always seem to come up with new “toppings” for this… This time I did crushed Life cereal, other times I use sugar free chocolate, or even peanuts, almonds, or other nut toppings… I, then, cover it & freeze it… I’ve kept this in the freezer for up to a week before and let it defrost for about an hour at room temperature and then enjoy… it tastes like ice cream pie! The only thing I caution is that it must be served cold, if not, the consistency gets distorted and it is no-where near as appetizing as it is ice-cold!

And I’m not sure about an alternative for sugar free cool whip, but I’m thinking greek yogurt + stevia might work? [I totally just came up with that at the top of my head, so no guarantees!

Wow, you organized the event AND you brought a cake—what a wonderful, kind and compassionate person you are! The cake looks terrific—I’m sure all the people who are diabetic/can’t have a lot of sugar were very grateful that for once they didn’t have to feel left-out come dessert time.
