Not Oats

This morning I woke up not feeling 100%… I’m pretty sure it was the overloading of dairy products from dessert… I slept really well though, so that was a plus… and a few  hours after I got up, my tummy seemed to resume back to normal, so I guess I learned my lesson (I hope!)… I had the lactose-intolerant discussion with my brother last night, who is pre-med, and he started rambling off about how when you don’t consume dairy regularly (which I don’t, but used to drink milk w/ EVERYTHING years ago), your body has a tougher time of breaking it up b/c it can’t handle it – interesting!

We had some leftover chicken-apple sausages from the other night, so I thought I’d be creative with one and have it for breakfast!  I chopped it up and added 2 eggs to the mix, threw it in the microwave for 30 second intervals until all cooked up… and voila, an instant, hearty, protein-packed breakfast!  This meal was quite good and I loved the flavor combination of the apples from the sausage w/ the eggs!  I need to remind  myself of breakfasts like this when I’m in search of something different!  Here’s my picture pre-assembly…

I have a better picture of it all cooked up, but it’s not uploading, so I’ll have to try to fix that later tonight!

Just to note, as you may have guessed, I am not typically a fan of eggs in the morning, simply because I love my oats + cereal… Egg whites are typically healthier for you than the whole egg, but I rarely have eggs, so I decided to consume the whole egg, plus there are some surprising benefits to consuming the yolk (once in a while):  preventing blod clots + macular degeneration + cataracts (all which are rampant in my family)…

About 30 minutes after eating this, I also had this guy… have I told you much I have been loving pears??!?!

Could they become my replacement for strawberries??  Well I don’t like them THAT much…… yet! ;)

PS.  Please keep your thoughts + prayers w/ the families + friends of the Boy Scouts who were involved in that horrible tornado, it’s truly a sad story :(

    thatallgirl ~ I hold the boy scouts near & dear to my heart considering my 2 cousins are Boy Scouts and the leader is my uncle… I can’t imagine what I would do if anything like that happened here, so I just can’t stop thinking about what their families are going through now…

    chandra ~ ugh, i’m sorry to hear about that awful weather, i hope it gets better for you & everyone in that area! that is way too funny that we had similar meals this morning! what a coincidence :)

    VeggieGirl ~ I know, so true :) I’m going to be sad when summer is over, no strawberries! It is an awful tragedy, I can’t imagine what it must have been like :(

    glidingcalm ~ Nope, I scramble them up w/ a fork, microwave, re-scramble with a fork, then microwave again, they come out scrambled :)

    Sorry you weren’t feeling 100% :( But at least if you figure out the cause is dairy, you can be feeling better in no time!

    I’ve never cooked eggs in the microwave! Do they just become like hard-boiled consistency after 30 seconds?

    I too love pears; but hey, gotta give props to the strawberries for being in season ;0)

    I was so devastated to read about in/hear on the news, about that Boy Scout camp being hit by the tornados. Terrible tragedy.

    Awe, that is so sweet of you to mention the Boy Scouts!! We here in Iowa (and across the midwest in general) are getting an intense beating this spring between tornadoes, rain, flooding, etc. It hasn’t been fun times. :-( But we’re keeping our heads up and hoping for an end soon and a lovely summer!

    P.S. I had a pear this morning too! And eggs!! Ha! We must be on the same wavelength today. :-)
