Since my parents spent the weekend at the shore, they didn’t return home until mid-afternoon so I decided since we couldn’t make my dad breakfast in bed today, we decided to make breakfast for dinner… Breakfast has always been a “specialty” of my dad’s, he used to make us mickey-mouse pancakes and omelets all the time, so I wanted to return the favor; however, I wanted to make a healthy dinner, so this is what I wound up with:
Whole-wheat blueberry pancakes topped with sliced almonds with sides of watermelon and Smart Bacon (aka veggie bacon)… My brother looked at it and said “What is this? Turkey bacon?”… I told them I wasn’t telling them until after they ate it and they all really liked it… They also had Morningstar breakfast patties too and enjoyed them! But the big favorite was the pancakes, so here’s the recipe I came up with:
- 1 cup whole wheat flour
- 1 cup white flour
- 3 tsp baking powder
- 4 eggs
- 2 cups almond breeze
- 2 tbsp honey
- 1 tsp salt
- 1 tsp vanilla extract
- 1/2 cup water (the batter seemed too thick for my liking)
- 1 cup fresh blueberries (I eyeballed this so it may have been slightly more)
Mix the batter well and pour on a non-stick griddle as you would normally make pancakes!
They most especially loved the taste of the fresh blueberries, but I’m sure frozen would taste well too… Here’s a pic of the inside:
For my dad, I made an extra special Mickey pancake, he loved it, but he wanted me to eat it (so it’s pictured above):
After dinner, my dad, brother, and I went for a 45 minute bike ride around our neighborhood… I’m glad we went later at night because the sun is still so strong!
This was a milestone bike ride for me because I finally decided to clip-in to my bike… I have a Trek road bike and I had hybrid pedals installed on it(half the pedal is flat, other half is clip), so that I can either pedal normal or clip-in to the bike… Being that I always clip-in at spinning, it has been my goal to practice clipping into the bike, so that I can ride the ACS more efficiently, like a real, professional bike rider would! However, last year I chickened out and didn’t pedal clipped-in, partially because I was nervous about my response time due to traffic lights, cars, other riders, etc… However I decided today to start practicing, so I’m prepared and today, I rode my full ride clipped-in and was able to un-clip pretty easily when I needed to… So, yay!
Anyway, it was a nice bike ride w/ my dad & bro – We worked up a good sweat
Now I’m off to shower & relax, since it’s already Sunday night, which means Monday is tomorrow

I remember when I first started clipping in on my bike. Terrifying, but it certainly makes climbing hills easier! I’m so glad it worked out well for you!

I wonder if breakfast is generally the dad’s job in most families… Mine would always make us wonderful breakfasts on the weekends. The Mickey pancakes are so cute! My dad made them just like that too

Yum! Looks cute! And it’s funny how much people like veggie/vegan food when they don’t know it’s vegan.
The first few weeks on my clip-ins were fine, and then I was all confident and in traffic and stopped, forgot to clip in, and PLOP! I was already stopped and fell right over! It was so embarrassing, hehe!
