Well, I started out the day with a return to the basics… I used to eat banana-nut oatmeal ALL the time until the fresh strawberries & blueberries came into season, so since I was unable to get to the store to stock up on them, I decided to make the oatmeal combination which I used to depend on: half a banana, half a cup of oats, cinnamon, 1 tsp flax, handful of crushed walnuts
I wanted stove top oats but didn’t have enough time to make them so I decided to try a different cooking method… I mixed a half cup of oats with water, popped it in the microwave and cooked it for 4 minutes on 50% power… It tasted ALMOST identical to stove-top oats and I didn’t have to clean a pot! I was truly in heaven this morning!
Breakfast held me over surprisingly well, but I did need to break for lunch slightly earlier than normal… I was looking forward to lunch since it was leftovers from last night… I also paired it with an apple to round out the meal… The panini wasn’t as impressive, probably because it wasn’t warm and I’m not a huge “ham” fan, but for some reason was craving it last night… Today? Not so much… Oh well!
To tide me over until dinner time, I packed one of my homemade trail mix snack bags… This contains Life Cereal, Whole Grain Cheerios, raisins, and banana chips!
I’ll be back with a dinner post after the gym tonight… I’m hoping to get to the 6:45 spinning class, since I’m in crunch mode for the ACS!
