Banana Overload

Happy 3rd of July people!  Just kidding ~ I know the real holiday is tomorrow, but I’m already celebrating today since I got done work early :)

I started out the day with a big bowl of cold cereal… I mixed Kashi Go Lean with Wheat Chex (probably 2 cups total?) with a cup of Almond Breeze and sprinkled some raisins + cinnamon + flax on top… I ate this around 6:15am and it held me over until 9:45… not too bad for staying power…

Mid-morning I had a Clif Z Bar, chocolate chip flavor, to hold me over until I had time to eat lunch… I worked until 11:30 so I was determined to make a few quick trips to the supermarket and the produce store to pick up some much needed essential items for the week ahead as well as the ingredients for PB pie (my family requested it for tomorrow’s bbq)…

When I got home, I was STARVING… on my way home from the store, I munched on some of these banana chips to tide me over…

When I got home I toasted up an english muffin and smeared some pb and banana on it :)

After reading Suite Apple Pie’s post last night regarding the potential banana shortage, luckily this has not occurred in my area because I bought all of these, 4 lbs. to be exact…

… for ONE DOLLAR!!!!!!!

Then, I was feeling in the mood to bake and I thought it would be a good opportunity to use bananas, so I decided to whip up a batch of Banana Pumpkin muffins…

Here’s the recipe:

  • 2 ripe, sliced/mashed bananas
  • 1 cup whole wheat flour
  • 2 tbsp sugar
  • 1/4 cup pumpkin
  • 1 tsp vanilla extract
  • 1/8 cup maple syrup
  • 1 tbsp baking powder
  • 2 egg whites
Preheat oven to 350 degrees… Mix all the ingredients well… Spray muffin tin with non-stick cooking spray… Pour into muffin tin… Bake for 15 minutes (depending on oven) until well-cooked… Cool and enjoy :)   This recipe makes 12 big muffins!
I sprinkled some almonds on top of 3 of them… my mom taste-tested one of them and loved them!

When I was done baking these up, I set to work on making my chocolate-peanut-butter pies:
While I was making these, I also “sampled” the pie filling from what was left in the mixing bowl… well, I did way more than sample :)   Multiply this picture by 3 or maybe 4 haha… it’s too yummy to resist…

Now I’m off to go throw in some laundry & do some online shopping for wedding items!

The plans for the rest of the day include getting some photos developed, picking up some things at Target, and going to spinning class with my brother at 5:45… I’ll be back after :)

    I heard about the banana shortage as well, and all I can say is–NOOOOOOOOO! and so on! Just can’t imagine my life without this wonderful and fragrant fruit!

    And wow you got those bananas for a GREAT price!

    Heh~it’s really hard to bake without sampling at least one or two things–i think it’s a fact of life :D

    Banana shortage- no way, my breakfasts would be ruined. I surely hope there won’t be a banana shortage. AND Those peanut butter pies look so good!!!!!

    Banana overload is right – but in a delicious way! I can’t believe you got that many bananas for $1!! That’s incredible!

    I would’ve had to have had at least 10 samples of that pie filling – those look insanely good!
