That bar did not do a good job of holding me over… I decided to dig into my next snack at 9:30 as a result…
I was SO excited for my mid morning snack because it involved an overripe mashed banana, cinnamon, flax (I needed to get it in somehow), and PB&CO. Dark Chocolate Dreams peanut butter… Notice I kept the pb on the side so I could spoon in a little taste of it with every bite… Definitely didn’t disappoint… I only wish I could have kept it colder, so it would have more of a ice cream consistency like my PB Banana Goodness
The only thing I should add was that it kind of bothered my tummy a bit, maybe overripe bananas are meant to be baked with and not eaten? Any thoughts from the crowd?
Ok, well now I am off to go run my normal Friday errands (bank, gas, produce store & supermarket)… back w/ lunch in a few hrs!

I blended an overripe banana into a smoothie this morning, and so far, no ill effects. I don’t think the ripeness makes much difference, unless it’s totally rotten.

I have never had issues with overripe bananas. sorry about the tummy!

Hmm… overripe bananas DO have a higher glycemic index, so maybe that affected your stomach?? Haha, I’m sorry, I don’t have a good answer. Hope you feel better though!
