Finally Caught Up

Well I’m officially caught up on my blog reading… you guys all had such delicious and yummy looking eats and fun-filled weekends!!!! I apologize in advance for my lack of commenting, I am fully “devoted” to reading each and every one of your blogs but with wedding plans fully underway and busy work weeks, it’s been difficult for me to comment on all of your posts, but I’m still reading (I know that goes without saying but just wanted to re-iterate!)…

Anyway, here’s a quick wrap-up of Sunday’s activities and food because I hate being behind by a day on blogging, so I’m doing this fast so I can get to real-time (aka Monday) :)

SUNDAY BREAKFAST

I started out the day with a nice $0.99 iced coffee w/ skim, no sugar from DD and had a big steamy bowl of oatmeal (made with milk ~ I usually use water, but since I went without toppings, I added milk for some “punch”)… I missed having oatmeal for breakfast, it has been since Thursday!

SUNDAY AM SNACK

Bill and I headed to church and then I came back and began to tackle my to-do list which included laundry, cleaning my desk (step 1 of my packing & moving out process – it’s a fiasco), working on the rehearsal dinner invites, catching up on blogging, blogging on my own blog, cleaning my room, packing food for Monday, etc… you get the idea! So I had a Kashi TLC Pumpkin Spice Flax granola bar to tide me over until I had time to eat lunch :)

SUNDAY LUNCH

Lunch was a yummy feast… Since I loved my pb&j panini so much on Saturday, I decided to recreate it at home, except I just cooked it on the oven instead of a panini press… I used a whole wheat english muffin and topped it with chunky peanut butter and 3/4 of a medium banana sliced in half… I ate the remainder of the banana on the side… It was so good but definitely not as good as the one I had on Saturday :-D … I also had a serving of Quaker Quakes in Caramel Corn… I also had a Dannon Light ‘n Fit strawberry yogurt for an additional protein kick…

Mid-afternoon, I decided to hit the gym with my brother, which was odd because I very rarely go to the gym on Sundays, but I think I might start going because it was SOOOOO empty! I did 4.5 miles on the elliptical and worked up quite a sweat…

SUNDAY DINNER

My parents went to the shore for the day but my mom called and informed me there were leftovers she saved for me for dinner, which excited me because I didn’t feel like thinking about what to make! I reheated one of her Rachel Ray mini meatloaves alongside some stewed tomatoes… I also sliced up half a sweet potato and made it into “fries”…

SUNDAY DESSERT

For dessert a little later, I had a Pure Protein bar in Peanut Butter… This was the last of my stash, so I need to go out and buy more… I’m still on the hunt for the PB marshmallow flavor, it seems all I can find are peanut butter and s’mores flavors at my Target (which is OK b/c I seem to enjoy both) :)

Then I finished up my wedding stuff and headed to bed around 10:30… and now it’s Monday! I’ll be back in a couple of hours with my breakfast (even though I already ate it!!!)…

    Oh my gosh, I’m so excited for your wedding, I cannot believe how quickly time has flew! Hope the last-minute preparations aren’t stressing you out too much and you’re able to enjoy all the yummy food you’ve been eating! :)

    Lindz I have some EXCITING news that I know you would appreciate :) This weekend I went to Whole Foods with my cousin and we found a NEW FLAVOR of Clif ZBaR!! I don’t know if you’ve seen it already or not, but it’s blueberry! And it’s AMAZING! It’s similar to a blueberry cobbler — definitely my second favorite only to the chocolate brownie. Just thought I’d let you know since you’re a fellow ZBaR fanatic :)

    It looks like you had a fun weekend! I can’t believe how quickly the time is flying – your wedding really will be here before ya know it. I can’t wait to see the pictures!

    i’ve made those mini meatloaves before too- they’re AWESOME!!

    I had a “PB&B” grilled sandwich (aka peanut butter and banana) the other day and those things ROCK!!! Ooozy with the PB and the sweet banana melting in there….. The pic from the one at the shore looks unbelievable! Good luck with all the wedding prep/moving :-)
