Love Of Oats

A blog dedicated to balancing a healthy and fun life… with oats!

Blueberry Heaven

Tonight after dinner and before we tackled the wedding favor project, I decided to make a blueberry crisp for my parents & brother… and of course myself… After looking up many recipes, I finally modified/combined a couple to come up with this delicious creation… I highly recommend it!

  • Mix 4 cups blueberries, 1/4 cup sugar, 1 tbsp vinegar (my sub for lemon juice), 2 tbsp wheat flour (my sub for cornstarch) – pour in sprayed/greased Pyrex dish
  • Mix 3/4 cup old fashioned oats, 1/3 cup wheat flour, 1/4 cup light granulated brown sugar, and 1 tsp salt… Cut in 3 tbsp Promise Light
  • Top/sprinkle dry mixture on top of blueberry mixture in baking dish until evenly coated
  • Lightly sprinkle a few teaspoons of light granulated brown sugar on top
  • Bake at 375 degrees for 40 minutes or until top is golden brown and blueberries are bubblin’ away

Pre-bake:

I didn’t get to take a picture of the whole dish after it had baked because everyone dug in immediately since the blueberry smell made its way throughout my house pretty quickly!  But I did get to take a picture of my yummy serving… of course!

Now it’s off to relax & get some rest… all of our favors are assembled, so now we just have to wait to do the placecards :)

Philly Cheesesteak

When it comes to cheesesteaks, there’s one winner that tops Pat‘s, Geno‘s, and Steve‘s… (For those of you who have ventured into Philly, you may have your favorites, but those are my top personal favorites)…

It’s my mom’s homemade cheesesteaks!

This isn’t because, when she was a teenager, she used to work at ——-… The most obvious reason is the nutrition factor of making them at home in a nice clean, grease-free kitchen as opposed to, well the complete opposite! She topped the steaks with a slice of cheese and peppers… On the side, we had sweet potato fries and I also sauteed up some broccoli rabe with lemon juice & garlic :)

And don’t get me wrong, like I said above, I do have my top three favorite cheesesteak places because sometimes on a late night in Philly, nothing can possibly beat a greasy cheesesteak, but typically I’d much rather eat one that doesn’t make me feel like I ate a bus OR got run over by one hehe… If Bill is reading this right now, he is probably shaking his head at me… he <3′s Steve’s Prince of Steaks :)

And now I’m off to go start assembling our favors… I’m thinking this project will be fairly straightforward and lead into a relaxing night, so let’s hope so!  I need to get my rest tonight because tomorrow is my BACHELORETTE PARTY!!!!!!  I’m still planning on doing 8am spinning tomorrow and afterwards I am meeting Bill at the travel agent to pay off our deposit for our Sandals honeymoon since it’s almost a month away!  Then I’m hoping to have a really relaxing day until the activities with the girls start at dinnertime :)

Dessert is definitely in the works for tonight so I’ll be back w/ a post later!
