Tonight after dinner and before we tackled the wedding favor project, I decided to make a blueberry crisp for my parents & brother… and of course myself… After looking up many recipes, I finally modified/combined a couple to come up with this delicious creation… I highly recommend it!
- Mix 4 cups blueberries, 1/4 cup sugar, 1 tbsp vinegar (my sub for lemon juice), 2 tbsp wheat flour (my sub for cornstarch) – pour in sprayed/greased Pyrex dish
- Mix 3/4 cup old fashioned oats, 1/3 cup wheat flour, 1/4 cup light granulated brown sugar, and 1 tsp salt… Cut in 3 tbsp Promise Light
- Top/sprinkle dry mixture on top of blueberry mixture in baking dish until evenly coated
- Lightly sprinkle a few teaspoons of light granulated brown sugar on top
- Bake at 375 degrees for 40 minutes or until top is golden brown and blueberries are bubblin’ away
Pre-bake:
I didn’t get to take a picture of the whole dish after it had baked because everyone dug in immediately since the blueberry smell made its way throughout my house pretty quickly! But I did get to take a picture of my yummy serving… of course!
Now it’s off to relax & get some rest… all of our favors are assembled, so now we just have to wait to do the placecards

my friend gave me a recipe for a similar dish, but it’s more of a baked oatmeal breakfast thing. But it’s so good, we just call it The Big O. For Oatmeal, of course (wink)

mangochild ~ awww thanks… i’m pretty sure that promise light is not vegan, but can’t 100% confirm… i know some of the vegan bloggers use earth balance as a sub, so maybe try that?
