Salad Panini

Yesterday I posted a recipe for my Easy, Creamy, Spicy Pumpkin Soup (sorry, I know it’s a mouthful!).  If you didn’t see it, you can find the recipe here.  We yummily enjoyed this on Sunday alongside a quick 5 minute fantastic creation that was formed by browsing through the fridge (yet again!).  For some reason, I was craving a grilled cheese that day, but also was craving a salad, so I decided to combine the two and form the Salad Panini.

INGREDIENTS:

  • 1/2 cup Baby Spinach
  • 1 medium tomato, sliced
  • Ground Black Pepper
  • 1/4 Sliced Cucumber
  • 2 Slices Whole Wheat Bread (I prefer Arnold’s)
  • 2 thinly sliced LF Deli Mozzarella Cheese
  • Hot Sauce
  • Cooking Spray

DIRECTIONS:

Spray cooking spray into skillet (or preferably a Panini pan) over medium heat.  Add one slice of ww bread to the pan and layer cheese on bread.  Add baby spinach, cucumber and tomato, layering as you go, to ensure an even sandwich, for ease of eating!  Drizzle a splash of hot sauce and ground black pepper on top and then add the second slice of bread on top.  Press down on sandwich using a “press” or other hard/flat object if you don’t have one (but I highly recommend one!).  Once sandwich appears to be grilled and “panini-fied”, remove from heat and slice in half.  Serve alongside of soup or salad for a comforting, yet healthy meal!
