Ole!

For dinner tonight I decided to finally make a recipe that I saw on Jenna’s blog a while back: chicken enchiladas. Her pictures looked super mouthwatering & appetizing so I knew it would be a yummy dish! I used whole wheat tortillas, a lb. of chicken (which I baked in bite-size pieces at 350 degrees for 30 minutes or so), 2 jalapenos (chopped), 1 green pepper (diced), El Paso enchilada sauce, Nature’s Path Organic Salsa, ff sour cream, and shredded cheddar & jack cheese.

And the finished product, complete with a side of salsa-corn (just boiled the corn in 1/2 cup water + 1/2 cup salsa):

Thoughts?  This dish is purely amazing!  It was super easy to prepare, especially if you make the chicken ahead of time.  I love all of the spicy flavors combined with the chicken & cheese – truly a flavor explosion!  I felt like I was eating some super yummy & authentic Mexican dish at a restaurant :)

You have no idea what this means to me :)   I am so happy that she likes the blog and found it worthy of an award – it made my day!  Upon receiving this award, I realized that I have been blogging for 9 months!  I can’t believe that, then again I can because I can’t imagine my life without the blogging community either.  Her post, which is featured here, really hit home with me because all of the bloggers she mentioned have been huge inspirations to me as well not just for meal or snack ideas but also in terms of fitness goals and healthy balances!

Now it’s off for some Sunday night R&R and Phils-watching (until I fall asleep of course).  Our Eagles won, so let’s hope the Phils can now :)

Loaded Up With Lycopene

Bill’s mom made some yummy vegetable soup and gave some to Bill yesterday so I decided to have a bowl of it for lunch today!  I had about a 2-cup serving of it, topped with crushed red pepper flakes.  On the side, I had my leftover bread, which I broiled, from The Cheesecake Factory the other night.  It was a perfect mix!  The soup was super chunky and loaded with tons of veggies - quite colorful!  I felt so well-fueled after eating this too – felt like I got my lycopene requirements for the week hehe!  Thanks Mrs. E! :)   I will have to get her recipe!

The rest of the afternoon has been spent watching the Eagles game (they are currently winning 20-7 against Atlanta with 4:50 remaining in the 4th).  I’m so happy they are winning because my parents are at the game and it’s their first time at the Linc, so I’m glad they got to see a good game!

Now I’m getting ready to prep for tonight’s dinner and I think Bill and I may go take a 30 minute walk after the game ends.  Today is literally an all-day sports affair considering the Eagles are one from 1pm-4pm and then the Phillies are on again at 8pm, so that’s why I’m planning on squeezing in a walk in between!
