Cranberry Delight

Good Morning everyone & happy Sunday!

It’s an excellent Sunday and I’ll tell you why…

  • Our Phils kicked some butt yesterday and won game 3 of the World Series – woo hoo!  I knew they would do it :)
  • Both the Phillies & the Eagles are playing @ home today (my parents are at the Eagles game today – have fun Mom + Dad!)
  • We didn’t make it to church today (because of the late-night game) :( , but on the other hand we had a super relaxing morning
  • Had the best coffee ever
  • Had one of the best breakfasts ever (and healthiest)

So, onto the food, I’ll explain about the coffee & the breakfast!  I got up around 9am, which is actually super late for me!  While Bill was still sleeping I decided to make breakfast and coffee so it would be ready when he got up.  I thought about what to have and decided on cranberry-blueberry pancakes, so that I could use the BSI in the recipe!

I used a cup of whole wheat pancake mix, water, 1/4 cup frozen blueberries, 1/2 cup fresh cranberries, 2 tbsp pumpkin seeds, and a generous sprinkle of cinnamon.  I mixed it all up well and started making the pancakes.  Here’s the mix (doesn’t it look so pretty?  It reminds me of Easter):

Here’s the finished product – the naked pancakes!  I used enough mix for 6 pancakes, but I made tiny silver dollar ones instead that yielded 19!  I had a serving of 6 and Bill had 10 :)   He loved em!

I decided to get creative with my toppings and Bill and I shared a banana, so I sliced mine up and used it as a topping.  I also topped with with a tablespoon of blueberry preserves & flax- divine!

Now for the 2nd success, Pumpkin Pie coffee!  If you spot this in Target, Archer Farms brand, you must buy it.  It’s super yummy!  The smell alone I loved, which Bill thought it was hysterical that I was literally sniffing away at my coffee!

Now Bill and I are off to go to a couple drive-by’s at some prospective houses so we can be back in time for the Eagles game!  Have a great day!

    Your pancakes are so cute. I might have to try adding cranberries to mine next weekend if I still have some left… or maybe I’ll make breakfast for dinner one night this week :D

    the smell of coffee is the best part! because i can’t drink coffee anymore, but still love it, i’m often found sniffing a bag of coffee beans at my parents house. soooo amazing.
