Hitting The Road

Ok people, we are off… I am bringing my homemade applesauce with us to my aunt’s house – only a 30 minute drive so not bad!  I used 2 whole bags of peeled/sliced/cored apples and simmered them on the stove for about 30 minutes using 1 cup of water, vanilla, and tons of cinnamon; when they were mushy, I used my immersion blender to make the mixture smooth.  It smells divine and filled up our entire house with the amazing smell – definitely feels like the holidays now  Don’t worry I’ll have pictures of it for later!

Although I wasn’t really hungry, I decided to munch on a Kashi TLC Crunchy Pumpkin Spice bar, since I knew it would be a while until I ate and I’d rather eat something hearty and just graze on appetizers, instead of inhaling them!

Happy Thanksgiving!!!

Hi Everyone in blogland on this amazing day!  I must say this last past year has truly been amazing.  I have been tremendously blessed and I really hope that I keep that in the front of my mind today and really take the time to appreciate not just my life but my family and friends as well.  I could go on and on for everything I’m thankful for and hope that my list keeps growing as the days, weeks, and years go by :)

So, I could ask you what you all are thankful for, but I’m not going to.  Instead, I ask that you all realize how lucky we all are to be where we are at today, that we are safe with our friends and family (especially in light of recent terrorist attacks).  Let us remember our troops also who are overseas making the ultimate sacrifice for us.

Now, on onto the normal blog :)   I had an amazing start to my day.  Bill was off to play football with a bunch of his friends, so I headed to the gym… On my way there, I had half a Clif Blueberry bar… It was my first time trying this flavor and it was yummy.  Bill ate the other half and enjoyed it as well.

When I got to the gym I had a truly kick-butt workout!  I did 30 minutes on the elliptical (3.0 miles), 35 minutes on the treadmill alternating running and fast-walking (2.8 miles), and then 30 minutes of upper body strength training (pull ups, tricep dips, bicep curls, abs)…  I kept my HRM on during the weights and it revealed that I burned about 700 calories during my workout session – amazing!

Once home, I couldn’t wait to have breakfast.  I was STARVING :)   I decided to have a lovely combination of pumpkin (1/2 cup or so), vanilla yogurt (probably about a cup or so?), cinnamon, chopped pecans, flax, and pom seeds.  For some staying power, I scraped my last Barney Butter jar completely clean to have on the side.  Sadly, the jar is finally in the trash now :(

I also had a delicious cup (or two) of cinnamon bun coffee w/ 2% milk - mmmm!

What made my breakfast even better is that I enjoyed it while watching the Thanksgiving Day Parade!  It’s amazing that our great city of Philadelphia has the longest-running Thanksgiving parade in history!  I think my favorite part was Elmo singing “Feliz Navidad:)

I am SO pumped because besides summertime, my favorite time of year is the Christmas season!!!  I love being festive and getting ready for the holiday and today marks the unofficial beginning of that season!!!!  Ok, gotta go, Santa is almost about to appear on TV hehe…
