Sick

So my worst fears came true – I am SICK.  Mid-afternoon, all of a sudden, my throat felt like it was on fire :(   I definitely have a sore throat I just hope it goes away soon – cold eeze here I come!  Luckily we still had a great time at my cousin’s house.

I made a homemade hummus and served it with celery sticks, wasa crackers, blue-corn flax chips (Target brand), and tortilla chips and it was a huge hit.  I took a picture of it but somehow it’s not on my camera any longer!!!!

I had some little bites of hummus along with salsa & chips in the beginning but didn’t snap a picture – sorry!

I did take a picture of my “real food” plate though – a turkey hoagie w/ hot peppers, pickles, homemade potato salad, my mom’s broccoli salad, and homemade cole slaw.  Quite a filling plate!

When the desserts came out a few hours later, I had a little of everything:  one slice of my grandmom’s apple cake, a cannoli, and some strawberries.

After this plate, I definitely went back and kept snacking on more fruit – yum!

Then when they passed around these adorable petite fours – I had to try one – too cute!

We just got home so I’m eating some of my leftovers from the other night:  oriental chicken salad (Applebees) and half a hot dog bun with Promise Light… my throat hurts so bad but I know I have to eat!

Once I’m done eating, I’m off to bed to sleep this cold outta me!  We didn’t get our Christmas tree tonight because it SNOWED!  But we will be getting it tomorrow after church :)   Yay!

Lot Going On

Hi Everyone ~ sorry for being MIA yesterday!  I just felt overwhelmed and needed to take a little break from the computer :)   Now I’m back and feeling refreshed and happier!

I woke up wide awake at quarter after 7 so I headed to the gym for 8am spin class.  It was an awesome workout and for the first time in a while, I truly felt like I got a great, hard workout in.  I burned 500 calories during the hour class and felt very accomplished :)   On my way to class, I had a Wasa cracker smeared with chunky peanut butter.  It was a great pre-workout snack so I think I will definitely be having this as a repeat snack!  I totally forgot about these crackers until my friend made a spinach dip last weekend and used them for dipping – I used to be addicted to these things!

When I got home, I had a yummy breakfast that involved my new favorite obsession:  Chobani yogurt!  These things are pretty expensive for my frugal budget, so they are a splurge item.  Plus they are so hard to find!  I had a blueberry Chobani mixed with flaxseed and pom seeds.

I also had two cups of coffee… I tried a new blend that I found in the store on sale:  New England Coffee in Gingerbread.  It is delish.  I had one cup with SF Hazelnut creamer and the second cup with skim.

Now I’m off to hop in the shower and get ready for the rest of the day!  Today we have A LOT going on:

  • We have potential buyers coming to look at our house from 1-3!!!!
  • Heading out around noon to go to Delaware for a little family get together
  • Getting our Christmas tree, stockings, and other decorations tonight

I’ll be back before I leave to show you what I’m bringing to our family get together!  I’m also using a tip that Off Her Cork gave me about baking sugar cookies right before we leave to make our house smell delicious and provide some treats for the people coming in!  Thanks Andrea :)
