Quickie

I started out the morning with making a big pot full of pumpkin pecan oats!  It has become our Sunday tradition to both eat oatmeal together before we head to church, so I love making delicious combinations stove top for Bill and I.

This Sunday’s combination consisted of:

  • 1/2 cup oats
  • 2% milk & water, fairly equal amounts
  • 1 large banana sliced
  • 10 pecan halves, toasted oven-top
  • 1/2 cup pumpkin
  • ground flax
  • drizzle of maple syrup

After church, Bill and I went our separate ways because we both needed to finish up some last minute Christmas shopping, aka stocking stuffers!  I headed to Target, which was MOBBED!  You would have thought it was Black Friday!  I got a lot of stuff and I’m so happy to say that I’m basically DONE my Christmas shopping.  The only thing that is left is getting the ingredients to make my homemade holiday gifts that I will give out to everyone.  Sorry, can’t share what they are until I give them out since both of our families read the blog haha!

When I got home, I was pretty hungry so I warmed up my leftovers from lunch yesterday.  I had a small serving of what was left of the spinach and then decided to add some leftover cooked spaghetti squash to my leftover lentils - let me tell you – BEST COMBO EVER!  It was really good :)

Now I’m off to do some baking.  We have a Holiday Pot Luck at work on Tuesday so I’m bringing some of the cookies I have leftover from Friday and baking up some more (because I don’t want to give them ALL away!).  I’m hoping to get some form of a light in-house workout in later in the afternoon so I’ll be back w/ my afternoon snack & dinner later tonight.  Hope you’re having a festive Sunday!

    oooo how I addore pumpkin oats, if you like dried cranberries then you should try it in them..mmm…Oh and could you maybe email me some stocking stuffer ideas I am drawing a blank this year have no idea what to put in hubbys stocking!

    Oh yes, Target WOULD be mobbed as it gets closer to the big day (Christmas, of course, haha :-D ).
