The End

Bill and I slept in a bit today which was oh – so – nice! We figured it would be a good day to do so, since we unfortunately have to return to work tomorrow… Bill had to work a few days last week, but I haven’t been at work since December 22nd ~ I know tomorrow morning’s going to be a toughie!  It’s definitely THE END of a great, relaxing holiday vacation!

I started off with coffee & breakfast at around 8:45am… This oatmeal combo contained:

  • 1/2 c oats
  • 1 c water
  • generous sprinkling of cinnamon
  • 2 tsp pom seeds
  • 2 tbsp sliced almonds
  • 1 tsp flax
  • 1/2 pb cookie larabar

It was a flavorful and fabulous bowl of oats that kept me satisfied until around 12:30pm! It’s amazing that this bowl would definitely not keep my hunger at bay Mon thru Fri, but for some reason it did today! Maybe I was still full from yesterday :)

When it was lunchtime, I smeared some homemade hummus on two slices of Arnold’s fiber bread. I noticed it was on sale today when I ran to the grocery store, so I decided to give it a try. It was amazing! It was really chewy & had a great texture to it, now I know what the fuss is about. On the side I had some baby carrots, leftover shrimp, and a sliced apple (thanks Dad!).

We spent the afternoon prepping both mentally and physically for the week. I got in a workout using one of my DVDs and did some ab work.

Dinner tonight was super easy & quick since we didn’t want to take too much time away from watching the Eagles game: leftovers!

Bill had his leftover chicken parm, while I enjoyed my leftover flounder :) On the side, we each had leftover baked ziti & a meatball that Bill’s Aunt Grace had given us to take home yesterday.

Now, true to my “goals”, I am shutting the laptop and relaxing for the rest of the evening to prepare for the week ahead!

Also, I should explain that my commenting on all of your blogs is probably going to cease yet again Mon-Fri due to the busy work week, but know that I am reading, it’s just too time consuming for me to comment :(

  2. mmmm all your food looks yummy. i am the same on the weekends, i think it is because we are constantly moving during the weekend so time flies before you realize lunchtime was an hour ago.

    Vacations are nice- especially the long ones!- but it also feels good to get back to the routine. Today’s my first day back at work too.

  9. I agree, I’m TOTALLY dreading tomorrow!! It’s going to seem like such a long week too :(

    Aw, I didn’t know Bill loved Boxers too!! Yeah, we’re pretty obsessed and Boxers are such GREAT dogs! We had our nieces and nephews (all under 5 yrs old) over this weekend and we were nervous because they’re all afraid of dogs and cats! Well Baylee was AWESOME with them and by the end they just loved her and all wanted to take her home with them :)

  11. Mmm that bowl of oats is certainly delish! I know what you mean about hunger being different on the weekends, I know for me it may have something to do with working out being the only major “movement” I make so I don’t have as much of an appetite haha
