Terrific

Happy Thursday blogland :)   I can’t believe the week is almost over but at the same time, I can’t believe that this time last week was New Year’s Day… It seems like it was so long ago already…

To switch it up a bit, I decided to have waffles today… I toasted two blueberry Kashi waffles and topped them with maple syrup, crushed almonds, raisins, and cranberries.  On the side, I had a sliced banana that I sprinkled with cinnamon.

Mid-morning I snacked on this Kashi Ripe Strawberry cereal bar (that yet again I found in our pantry!)… It expires next month so I needed to consume it soon :)

Then, it was off to my last lunch with my dad!  Since I’m moving to a new location at work, I won’t be able to have our Thursday lunches at least not until the summer when I come back to my original location.  We decided to go to a local Italian restaurant that we both love for lunch, instead of our normal Panera or Wegman’s since it was the last lunch for a while!

We started out with some super crusty bread with a drizzle of olive oil & herbs ~ This was one roll that I broke into three pieces, but I only ate about a 1/3 of this…

For my entree, I ordered the caprese panino with mixed greens… The caprese panino was filled with mozzarella, basil, roasted red peppers, and of course thick slices of tomato.  I’ve ordered this before and loved it ~ cold mozzarella and tomato is SOOOOOOOOOO my weakness ~ anytime I see it on a menu, I’m ALL over it :)

I could only eat half of my panini during the lunch and couldn’t eat the other half so I waited until later in the afternoon, around 4′ish, to have the other half!

After work, I headed to the gym and did a quick ab workout and then went to 5:30pm spinning for a great sweat-fest :)

When I got home, my lovely hubby had our leftover rice casserole already popped in the oven heating up so it was ready for us to eat for dinner.  I was kind of full from my heavy lunch so I just had a small portion…

Now it’s off to relax and get ready for Friday!  Woo hoo :)

    HOLY CAPRESE, that looks incredible!! I honestly don’t think I’ve ever really had a good true caprese sandwich, salad, or anything of the sort, even though every time I see a picture of it I want nothing more than to eat it. I guess I need to try making my own because I don’t even think I’ve ever seen it on a menu. I’m clearly going to the wrong places!

    It is crazy that last week was New Years Day!! When I was in Italy all I ate was caprese panini – SO GOOD!

    Oh there is NOTHING as wonderful as fresh mozzarella!! Anytime I see fresh mozz. it brings me back to a trip to Salerno, Italy where I tried mozzarella di buffala…SO delicioso!! Yay caprese salads. mm I’m lusting for Italian food now. Happy Friday (in 5 minutes haha). :) :)

    Yum! Yay for lunch with pops, that is SO nice to be able to do that, and hopefully again soon! Um and your mom’s comment is SO cute :D Thanks for that article earlier- I need constant reminders that it is okay to REST and not do sweaty cardio every day! Siigh, it’s so addictive…everything in moderation :D
