I had a gorgeous breakfast this morning and was so excited to share it with you…
that is, until I accidentally deleted the picture
Ugh, it irritated me so badly that I deleted it because it was such a yummy creation. I made an egg white and spinach omelet with chunky salsa for dipping alongside two Morningstar breakfast patties. Sorry I can’t share the picture!!
While I ate my breakfast (and Bill slept), my delicious creation was in the oven baking: peanut banana bread.
Here’s my recipe…
- 4 very ripe bananas
- 2 cups whole wheat flour
- 1/2 cup sugar
- 2 tbsp cinnamon
- 1/3 cup maple syrup
- 2 eggs
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup peanuts
- 1/2 cup 2% milk
Preheat your oven to 350 degrees. Mix the dry, then mix the wet, then mix them both together! Mix until well combined, I mashed out the chunks of banana until somewhat smooth. Pour into a sprayed cake pan. Bake for 40-45 minutes. Be sure to keep an eye on your bread towards the end, it should be golden brown. Let cool for 15 minutes and then slice and enjoy!

When Bill woke up, I served him a slice with a little bit of Smart Balance and had a couple bites of his yummy portion. It’s a pretty dense banana bread, kind of sweet (but you could easily omit the sugar for a healthier version), and all in all quite tasty. I loved the different texture and crunch that the peanuts provided.
Now I’m off to get some laundry & errands done around the house, we might take a trip to the furniture store to scope some more stuff out, of course while we sing our Fight Song “FLY EAGLES FLY… On the road to victory…”
