Hi Girlies (and guys!)… Yesterday was a crazy, busy day, so much so that I might start blogging one day behind at least for Monday thru Thursday… I’ve sadly given up commenting on blogs just simply so that I have enough time to read all of your posts; however, I’m obviously still reading the comments that I receive on my blog so feel free to comment away if you wish! Also, if you don’t see a response to your comment, it’s probably because I emailed you OR in the very worst-case, missed it, so once again, I love email so if you have a question and don’t feel like commenting, feel free to email!

Yesterday was off to a lovely start all because of this oat-filled breakfast… When I thought about what to have for breakfast, I knew it had to be oats because I haven’t had any since I was home! I decided on a blueberry-oat mix that I cooked stove-top for Bill and I. It included (for 2 servings):

  • 1 cup old fashioned oats
  • 1 cup frozen blueberries
  • 1/4 cup egg whites
  • 1 large ripe banana

I tried a new method this time. Instead of using a wooden spoon to stir, I used a whisk and whisked it thouroughly every few minutes. The result was an extra creamy and smooth both of oats that was to die for!

As you can see below, I topped it with some ground flax and a heaping amount of sliced almonds. Alongside, I had a cup of coffee, which I inahled!

Shortly after breakfast, we headed off to church and then over to see our future home so that we could start to measure for furniture and things like that ahead of time before we move in. It was a productive trip and it was even more exciting because we recently accepted an offer for the sale of our current house! So, yeah, things are only going to get more stressful and chaotic as we move/pack, etc, but at least the burden of selling a house is somewhat over! Our projected settlement date is March 27, so we are counting down for the next two months – it’s so exciting!

We spent a decent amount of time there and didn’t get home until 3pm and were starved. Bill stopped and picked up a meatball parm sandwich, so I split it with him and had two clementines alongside.

I was excited about dinner because I made sure it was going to involve my new crinkle cutter (as seen below).

My original intention was to make a cereal crusted chicken recipe that I found in Real Simple, but I realized I didn’t have any cereal on hand that would fit the texture that I needed. I spotted a big bag of pretzels in our pantry and thought hmmmmm, this could be interesting, so I used them instead! I ground up enough pretzels in my VitaMix (which took about 5 seconds) to make 2 cups worth of “breading”. Here’s the full recipe:

Pretzel-Crusted Chicken

  • 2 cups ground pretzels (finely crushed)
  • 1/2 cup egg whites
  • 2 large chicken breasts (8 ounces each)
  • salt, pepper, garlic to taste

Cut chicken into bite size pieces. Dip chicken into egg whites and then into pretzel crumbs. Place on a sprayed baking sheet and sprinkle with salt, pepper, garlic powder. Bake for 30 minutes at 350 degrees. Broil on low heat for 10 additional minutes or until crispy.

We had some steamed veggies and waffle fries on the side, as well, which were a huge success. Here’s how I made the fries:

Waffle Fries

Grate 1 large potato using the waffle cutter. Soak the “fries” in a salt bath using 1 tbsp salt & water for 5 minutes. Remove from water and place on a sprayed baking sheet. Bake at 350 degrees for 30 minutes (or until crispy), stirring every 5-10 minutes. Voila!

I served the chicken with honey mustard sauce which I made with equal parts honey and dijon mustard.

It was a delicious dinner that was easy to make and even easier to eat :)

After dinner, my sweet tooth kicked in so I made some hot chocolate, but this wasn’t any normal hot chocolate. This was made in the Vita-Mix. Did you know if you run warm liquids in the Vita-Mix it will actually boil (so you can make soups & fondues)? Isn’t that crazy?

Vita-Mix Hot Chocolate

Place 1/2 cup warm water, 1/2 cup milk, 1 hot chocolate packet, and 10 mini marshmellows in Vita-Mix. Run on high speed at level 10 for 4-5 minutes or until steaming. Pour into a large mug and enjoy!

I’ve never had hot chocolate quite as good as this one because I always wind up with clumps, using the Vita-Mix worked wonders and it reminded me more of a cappucino than hot chocolate. It was light & airy!

    Congrats on the sale of your house Lindsay. Ours has been on the market since November, and not one single offer! I know I need to be patient with the horrible housing market, but interest rates are so low right now…come on people, buy our house…please?

    Thanks for the hot chocolate tip. I’ve never used my Vita-Mix to make cocoa – no clumps, why didn’t I think of this sooner?
