Betrayal

Hi Guys!  First of all, I skimmed through the comments and I am really loving the great support and responses that I’ve been receiving in response to Love Yourself” week.  I’m so glad that you have enjoyed the topics and have been putting them into practice!!!!! 

I will reflect more on my progress with today’s topic later tonight, but I wanted to recap today’s food thus far… This morning, I had another bowl of oatbran topped with cinnamon, blueberry flaxseed, sliced almonds, and fresh strawberries.  I loved this combination so much yesterday that I had to repeat it today!  However, no worries, I think I’ll get back to oatmeal tomorrow just to switch it up!  I feel like I’m betraying my lonely oatmeal canister!

Mid-morning I snacked on a Gala apple & a 100 calorie pack of almonds and walnuts.  This snack held me over for about 2 hours but then I was starving.  I guess the PB2 holds me over better!  However I love the crunch and convienience of these packets!

Lunch was a big veggie-packed salad.  This bowl included:

  • Spring Mix Lettuce
  • Leftover steamed broccoli
  • Cannelini Beans
  • Carrots
  • Pecans

I topped it with my dijon vinagrette, seen next to it.  I LOVED this salad ~ so fresh & so many textures!  When I was reading through blogs today, I noticed that Rose had a similar lunch, although I wish I had her FlatOut wrap :)   I thought this was funny because both Rose and I are trying to have crap-free weeks and load up on the veggies.  As I always say, great minds think alike!  And a very special thank you to Rose for posting about my Love Yourself week, I’m so glad you are enjoying it.  Your words brought a big smile to my face!

On the side, I had a slice of ww bread topped with my homemade hummus.

This filled me up… at first.  But then shortly after I felt hungry.  I should have packed some cottage cheese or yogurt to have with my lunch, but I didn’t think about that last night when I was packing :/

I tried to load up on water to hold my hunger because I didn’t have any “emergency” crap-free snacks with me!  Finally, at 3pm I had my homemade banana nut bread Larabar so that I am well fueled for to the gym.  It was SO good yet again, and I think it tasted even better because I was hungry!

Ok, well it’s off to the gym, where I’m planning on doing the elliptical again on a random mix of inclines.  On my drive home, I have sliced cucumber to snack on, but I think I may be grabbing something protein-packed when I get home too, because I have a feeling I won’t be able to wait until 7pm for dinner :)

    mmm yummy day!! that is the thing about eating crap-free, right? you have to do so much advance planning to make sure you don’t end up stranded with an empty tummy and nothing to put in it! excellent job powering through until your “lindsaybar”, though!

    Everyone sure is buying into this oat bran thing aren’t they? It’s awesome stuff! The PB2 thing is quite the hit too, but I’ve never seen it around here. It makes me pretty sad that I’m missing out on all of the powered peanut butter goodness haha

    Hi Lindsay-I’m Danielle’s friend from high school and she sent me your blog to send along to my friend Sarah who also has a food blog. I am just reading your blog today and enjoying it, esp as we are at similar stages in life (I got married in August). I’m always hungry around 4 or 5pm while still at work and usually don’t get to make and eat dinner until 7 or 8pm. I need to start bringing along more healthy snacks to work!

    That salad looks awesome!! I love pecans in almost anything. I make a mustardy dressing similar to yours, but I usually leave out the oil. I really love it on top of a salad that has a nice crumbly cheese like feta or gorgonzola. I think it mixes with the mustard and… oh my goodness… so good!
