Din din was a yummy treat for me: breakfast for dinner! Since I’m avoiding meat, I put in a meat-filled frozen pizza for Bill along with a leftover part of one of his quesadillas from last night. By the way, I read a comment asking what kind of tortillas I used, they were Ortega whole wheat, simply b/c it was the only whole wheat tortilla I could find that didn’t have HFCS
On my plate, however, was a yummy mix of proteins & veggies! I had a Morningstar veggie sausage, one “fried” egg (I just kept flipping it) that I topped with hot sauce, regular steamed spinach, and then a serving of this Stouffer’s spinach souffle that my mom had given to me. I know I had lots of spinach in this post, but I love it so!

On the side for an extra veggie punch, we had salads that I topped with leftover sugar snap peas and cucumbers. I topped it balsamic dressing and mixed it all together.

Ok, now true to my Lenten goals, I’m shutting the laptop! Then I will be off to enjoy Biggest Loser & Lost!

BFD has become a weekly ritual in our house. Every Wednesday, we have breakfast for dinner and it’s definitely one of the high lights of my week.
Tonight it was omelets and they were fantastic.
BFD rocks!
Spinach is definitely my all time favorite veggie. So versatile and fast and nutritious.
All my eggs end up being ‘fried eggs’ since I haven’t yet perfected the omelette! Your spinach looks fantastic. Enjoy your tech-free evening.
