This edition of Feel Fabulous Friday involves something that I’m sure will make me feel fabulous by whipping up some new fun recipes via this neat cookbook that was sent to me yesterday: Peta’s Vegan College Cookbook!

I was so thrilled and can’t wait to start diving in and trying out some recipes… Although I’m not a vegan, I love my veggies and like eating meat-free occassionally… I already scanned through some of them and I can’t wait to try the quick and easy microwaveable desserts, plus they have a whole section devoted to peanut butter!
But the good news is… you can try these recipes out too! I was offered the opportunity to receive a 2nd cookbook so I decided to give it away to my wonderful readers… so my question for you all is… do you want to Feel Fabulous on this Friday too?

My favorite vegan recipe is: Lentil Tacos
* 1 cup finely chopped onion
* 1 garlic clove, minced
* 1 teaspoon canola oil
* 1 cup dried lentils, rinsed
* 1 tablespoon chili powder
* 2 teaspoons ground cumin
* 1 teaspoon dried oregano
* 2 1/2 cups vegetable broth
* 1 cup salsa
* 12 taco shells
* 1 1/2 cups shredded lettuce
* 1 cup chopped fresh tomato
1. In a large nonstick skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute. Add broth; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until the lentils are tender. Uncover; cook for 6-8 minutes or until mixture is thickened. Mash lentils slightly.
2. Stir in salsa. Spoon about 1/4 cup lentil mixture into each taco shell. Top with lettuce and tomato or salsa.

my fave vegan dessert to bake:
peanut butter bars
4 cups oatmeal
1 cup brown sugar
1 cup margarine (vegan), melted
1 package (6 ounce size) vegan chocolate chips, melted
1/2 cup peanut butter
mix and bake first 3 ingredients for 10 min at 425 degrees. let cool and spread peanut butter layer on base and then melted chocolate layer on top of that.

My fave is DEFINITELY lentil stew. Or, if you know Rachael Ray lingo, lentil stoup (stew + soup). I add in whatever I have on hand… other beans, edamame, spices, cilantro, parsely, canned tomatoes, etc. Definitely a pantry cleaner.

Spicy Black Bean Hummus
1 garlic clove
2 Tablespoons fresh lemon juice
1 Tablespoon tahini
1 teaspoon cumin
1/4 teaspoon salt
1 (15oz) can black beans, rinsed and drained
1 small Jalapeno pepper, finely chopped
Dash of crushed red pepper
2 teaspoons extra virgin olive oil
Place garlic in a food processor; process until finely chopped. Add lemon juice, tahini, cumin, salt, black beans, jalapeno pepper, and crushed red pepper; process until smooth. Spoon bean mixture into a bowl, and drizzle with extra virgin olive oil. Serve with crackers, veggies or pita chips.

You have to try it, it’s the best!!
1 lime, juiced
1 tablespoon olive oil
1 teaspoon cumin
1 clove garlic, minced
dash of salt
3/4 cup canned black beans, rinsed and drained
1 tomato, chopped
10 whole-grain tortilla chips, crushed
1/4 avocado, chopped
Whisk together lime juice, oil, cumin, garlic and salt. Toss all ingredients together.
Let me know how you like it! Would love to have the cook book to give to my daughter who is heading off to college in the fall, she is a vegetarian.
