The rain hasn’t stopped… still pouring, still gloomy… and to make matters worse, it’s my dad’s birthday (!!!!) and my parents have been without electricity since yesterday afternoon! Ugh… Luckily, I was able to take advantage of a gloomy day to prepare a scrumptious b-fast… I got up early this morning so I was able to make it a little bit ahead of time and let it soak and the flavors meshed together well.
Oatmeal Pudding
Mix the following ingredients well:
- 2 cups old fashioned oats
- 1 1/4 cups 1% milk
- 1/8 c brown sugar (I think next time I may omit this)
- 1/8 c maple syrup
- 1/2 cup chopped walnuts
- 2 ripe bananas, sliced
- 1 egg, 1 egg white
- 1 tsp baking powder
- 1 T cinnamon
- 1 T vanilla extract
- 1/2 tsp nutmeg
- 1 tsp salt
Pour mixture into a sprayed baking dish. I let it sit for about 2 hours covered in the fridge; however, I think the longer you let it sit, the better it will turn out. Bake at 425 degrees for 20-30 minutes or until semi-firm. Scoop out a serving, the consistency will be somewhat mushy and very moist, top with a spoonful of peanut butter and enjoy!
