Yum! We attended a wedding last night and didn’t get home until late so I knew that this morning called for a very special breakfast: whole wheat flax waffles… I don’t think there is anything more comforting on a Sunday morning. These waffles are super easy to make and the results are scrumptious…
WW Flax Waffles
- 1.75 C whole wheat flour
- 1/4 C ground flax seed
- 1 T baking powder
- 1 large egg
- 1 1/2 cups milk
- 1/4 cup canola oil
- 2 T ground cinnamon
- 1 tsp vanilla extract
- 1/2 tsp nutmeg
- 1 tsp salt
- Garnish: Sliced Fruit (berries + bananas), Almond Butter, Maple Syrup
Mix dry ingredients. Mix wet ingredients. Stir with a whisk until well combined. Spray a warm waffle iron with non-stick cooking spray. Pour mixture on to the hot waffle iron. Follow your waffle iron’s instructions, as appropriate. I use the Oster Flip Belgian Waffle Maker. We received it as a shower gift and I love it because you can flip it half way through so it cooks evenly. When waffles are done, top with sliced strawberries and bananas, add a blob of almond butter and a drizzle of real maple syrup and your Sunday morning is complete!
