Twist On A Fave

Ya’ll prob know how much I LOVE crab cakes – they are one of my favorite foods ever and I even had them at my wedding at the Jersey shore :)

Well I decided to put a spin on them and try to make my own makeshift crab cakes using tuna instead and they were delish – not as good as real crab cakes I have to admit but much cheaper than using jumbo lump crab meat and a good substitute if you are in a pinch!

Not So Crabby Tuna Cakes

  • 1 1/4 cups whole wheat crackers, crushed
  • 3/4 c olive oil mayonnaise
  • 3 T spicy mustard
  • 1/4 c chopped onion
  • 1/4 c chopped celery
  • 3 T old bay seasoning
  • 3 – 6ounce cans of albacore tuna, in water, drained

Mix all ingredients together well.  Shape into patties slightly smaller than the palm of your hand.  Place cakes on a lightly sprayed baking tray.  Place in oven on broil for about 8 minutes on each side until golden brown.  I love Old Bay so when I flip them, I usually sprinkle a little bit more Old Bay on the tops.  I’m addicted to it, I know it’s high in sodium, but I typically follow a low-sodium diet so this is my splurge!!  Bill and I loved having these tuna cakes for dinner, although we definitely prefer the real crab cakes, it was a nice change and super easy!  Next time, I am going to sub the tuna for salmon!

Prep ahead tip:  For me, prep work ahead of time is essential to having a delicious dinner.  I pretty much combined everything the night before, EXCEPT for the crackers, in a covered container and popped it in the fridge.  When I got home the next day, I just added in the crushed crackers, mixed well and popped them in the oven.  It took literally 5 minutes of prep time before they went in the oven.  That is my kind of meal!
