Feta For The Betta

Thanks for all the great and delicious suggestions on how to enjoy Athenos Feta!  Now I am so intrigued and can’t wait to start experimenting… Unfortunately, I had to pick just one…Congrats to Mimi from Damn The Freshman 15 who wrote:

Nice idea! I love using cheese in “all the wrong places.”

- Sprinkled into sweet potatoes (great tangy contrast)
- With…wait for it…peanut butter! I promise it’s good!
- On top of roasted veggies with balsamic vinegar
- On top of fruit salad (kind of like adding salt and lemon juice)
- On burgers/porkchops/portabella mushrooms
- In guacamole
- If you have a mild-tasting variety of feta, it can work for cream cheese in a dish where the cream cheese isn’t the star ingredient

My Big News

So, if you haven’t noticed, I’ve been a little MIA lately in terms of posting… Well, starting today that will change… and there is a simple and exciting reason why, but I wanted to wait a little bit before sharing with you all… but now since some time has passed, I’d like to share with you my exciting news… I’m pregnant!  I had to stay away for a little because I had been so unbelievably tired that I had no desire to post, but now that I’m further along, my energy has returned and I feel better than ever…

Needless to say, hubby and I are more than thrilled about the news and cannot wait until February to meet our baby!  We are not going to find out the sex of the baby though simply because we both love the surprise of it!  My due date is February 2nd which means that as of today I am almost finishing up my 14th week and in the 2nd trimester :)

Now that the beans have been spilled, I also would like to announce that I’m going to be turning this into a joint pregnancy and food blog!  I have to say although there is an overabundance of wonderful food blogs, I haven’t really found a good pregnancy blog resource so I’m hoping that maybe I can help someone else by documenting my experiences, research, and fun along the way…

I plan to post weekly in regards to my experiences each week but I also plan to keep up food and recipe blogging as well, so you should only notice a slight difference :)
