Love Of Oats

A blog dedicated to balancing a healthy and fun life… with oats!

Copy Cat

I’ve encountered a lot of really great recipes over the last few months courtesy of fellow bloggers.  I have been devoting my creative energy to dinner recipes lately instead of desserts because I have been obsessed with the two recipes below instead of coming up with my own.  These recipes are just TOO good not to share, in case you missed them or have not discovered these blogs, I wanted to share them with you.  I have made them and brought them to parties and they were a huge hit.  They are absolutely perfect to bring to a graduation party or a Fourth of July picnic!

Vegan Chunky Chocolate Peanut Butter Cookies by Eat Live Run.  A rich chocolately crumbly cookie with an intense peanut flavor… and no one believes they are vegan.

S’more Cookies by The Girl Who Ate Everything.  I have become with s’mores desserts lately, they are a nice change and you get a bite of graham, chocolate, marshmallow & cookie in each bite (not to mention that they are SUPER easy to make).  These definitely satisfied my craving and are a huge hit everywhere I bring them.  My mom doesn’t like s’mores and even she loved them!

Hope you enjoy ;)

Sweet Enough

Hi Everyone -
Sorry for taking a little break the last two weeks but I’ve been busy!  Busy around the house – we started quite a few outdoor projects on our house… and I’ve been tackling major cleaning and re-organizing on the inside… I reorganized my kitchen cabinets, which were a MESS!  My next plan is to tackle our master bathroom’s vanity which scares me!  But anyway, enough about that, I’ve been busy in the kitchen too :P )

I have been reading a lot of blogs lately (my collection keeps growing!!!) and found two recipes that I really wanted to try… I have been slacking in the “come up with your own recipe” area, but I really like using the blog as a way to share recipes that I have found and love with you, so I hope you appreciate this post…

The first recipe that I’d like to share is for these amazing blueberry crumb bars… I wouldn’t say they are dessert because they are not sweet except for the natural sweetness from the blueberries, although you could change that by bulking up the sugar content, but I really enjoyed them as a mid-am snack, plus the whole story behind the recipe is really sweet!  I followed everything to a T except I added a ton of cinnamon… hope ya’ll enjoy!

Then I also whipped up a batch of Angela’s 3 Ingredient Homemade Chocolate Covered Raisins except I primarily used almonds with some raisins mixed in :)   They came out delish and I like these because you can keep them in the fridge for when you just want a handful of something sweet…

The next item on my to-do list is cupcakes with some sort of flavor-enhanced buttercream icing for Father’s Day… I’m still in search of the perfect combination though but I’ll share with you as soon as I’ve got some ideas!
