I’ve been trying hard to get my pre-pregnancy body back especially before I return to work in the next few weeks, since I know my time will be much more limited than it is now with trying to balance work + baby + husband + sleep + life… got all that?
I’ve been doing this by incorporating lots of cardio with weight training and light ab work in addition to cleaning up my diet and keeping a food journal. Thus far I have lost 32 pounds of the 40 I gained over a 12 week period (however I did lose a large majority of the pounds after giving birth – I had pre-eclampsia and retained a lot of fluid at the end of pregnancy).
I’ve been doing great with ridding myself of the junk (with the exception that I do allow myself to enjoy treats during the weekend in moderation), but I’ve also been finding ways to introduce foods that I love in a healthier form. Now I’m sure you have made your own sweet potato fries as have I numerous times! But my latest attempt produced the best fries I have had yet. Crispy and super flavorful, so I had to share with you
Ingredients
- 1 large yam or sweet potato
- 1 T cumin
- 1 T chili powder
- 1/2 T ground black pepper (I have an adjustable pepper mill so I set it for the largest size)
- Extra Virgin Olive Oil
Approach
- Slice potato super thin. I actually just used a super sharp knife; however, feel free to use a mandolin or other slicer.
- Line out potatoes on a large lined baking sheet (parchment paper works best) in single file
- Mix seasonings all together in a small bowl
- Drizzle olive oil over potatoes lightly
- Sprinkle seasonings equally over potatoes
- Bake at 400 degrees for 16 minutes or until crispy
Note: I have a confection oven, so you may need to bake them for slightly longer depending on your desired crispness.
Seriously, hands down, this is the best flavor combination I have tried when making yam fries. I love the spiciness and smokiness that the combination of chili powder and cumin provide and the EVOO adds some fat & richness while helping the potatoes crisp up. Delish!!
