SO yesterday I hinted that I tackled one of the items on my bucket list… did you guess what it was? Well, if you guessed homemade bagels, you are right! I was skimming through blogs on Saturday and found a yummy-sounding bagel recipe from (never home) maker, so I decided to give it a whirl since it had really clear instructions! There were a few differences with my take on the recipe:
- I used all whole wheat flour instead of wheat / white mix
- I made my bagels into “mini” bagels
- I took a few pieces of the dough and added some raisins (soaked in water for plumpness prior to baking) and cinnamon for a different twist on a few bagels
- I didn’t have sesame seeds so they were omitted
Since I didn’t come up with the recipe, see above link for the scoop, I thought I’d do this post mostly via pictures!
Mixing yeast & warm water…
My doughy ball of goodness waiting to rise… except the problem was, it didn’t really rise at all. I let it sit for 2 hours in a warm place and it didn’t budge. Any ideas why? Is it because I used all whole wheat flour? All you bakers out there, do you have any advice for me?
My bagel toppings assembled: flax, sea salt, rosemary, ground black pepper…
Boiling water + organic backstrap molasses… looked like beer or apple cider to me!
One bagel waiting to get dunked into the bath
And then, the finished product…
Inside the doughy-goodness…
A sliced open cinnamon raisin view w/ butta…
Overall, I loved this bagel making adventure. I thought the bagels came out great texture wise. I think next time I would boil them slightly less, I think since I made smaller bagels, they didn’t require as much baking time, but I didn’t realize that until it was too late! Either way, I am still impressed but I think they would be even better if I reduce the time. The recipe was really easy to follow and I can’t wait to experiment with some other flavors & toppings!
Oh and in case you were wondering, I got 17 mini bagels out of this batch… I gave some to my parents, sampled a few hehe, and then froze the rest of them for longer enjoyment and freshness
