Feta For The Betta

Thanks for all the great and delicious suggestions on how to enjoy Athenos Feta!  Now I am so intrigued and can’t wait to start experimenting… Unfortunately, I had to pick just one…Congrats to Mimi from Damn The Freshman 15 who wrote:

- Sprinkled into sweet potatoes (great tangy contrast)
- With…wait for it…peanut butter! I promise it’s good!
- On top of roasted veggies with balsamic vinegar
- On top of fruit salad (kind of like adding salt and lemon juice)
- On burgers/porkchops/portabella mushrooms
- In guacamole
- If you have a mild-tasting variety of feta, it can work for cream cheese in a dish where the cream cheese isn’t the star ingredient

Who Wants A Change?

It’s summertime and the abundance of fresh veggies, fruit, and sunshine has consistently made me want to change for the better… Has this happened to you?  One such change I’ve implemented is making the change to feta… Now, I have always loved feta cheese but lately I have been trying to use feta as a replacement for the normal cheddar and american cheeses that I have grown up on… it has 1/3 less fat and 30 percent fewer calories than typical cheddar cheese… In addition, Athenos feta comes in 11 different delicious varieties… The problem is that the only way I have been enjoying feta is in salads and on sandwiches or wraps, so I’m asking you for ideas!
