Best I’ve Made

Yup.. this has to be the very best veggie sammie I’ve ever made… if you love roasted veggies, like me, I’m sure you’ll love this one.  It’s very simple so I didn’t use my normal recipe page, but I did want to share this combination since it’s becoming my favorite go to meal!

First, I sliced eggplant and placed it onto a lined cookie sheet.  Then I sprinkled each slice with a little bit of salt and let it sit for 20 minutes to draw the excess moisture out.  I sliced a tomato and onion and placed them on the cookie sheet.  Then, I drizzled all of the veggies with a little bit of EVOO and put them in the oven at 350 for about 20 minutes or until everything looked just right (aka below).   While the veggies were cooking, I sauteed up about 2 cups of fresh spinach.  Then, I just sliced a WW focaccia roll, drizzled some balsamic vinaigrette on both pieces and popped it in the oven for 5 minutes.  I put all of the veggies on my bread, topped it with 1 ounce fresh goat cheese (sorry guys the cheese is hiding!), put the top on (hehe), and took many enjoyable bites… I think what makes this sandwich unlike any other is the roasted tomatoes and the carmelized onions… I love tomatoes and roasting them just makes them even better… yum!

Come on… who wouldn’t want to dig into this guy? :)

Blue Sage

Yesterday I spent wonderful day w/ my mom & grandmom getting pedicures at Toppers Spa.  It was so much fun! I think this might be the first time I have put feet on the blog, but I just love the color – isn’t it so “spring”? :)

After we got our tootsies all painted and pampered, we headed over to Blue Sage for lunch.  I have been meaning to come back to Blue Sage for over a year (after dining there with some fellow foodies!),but someone I kept forgetting about it. After yesterday’s fabulous veggie-filled lunch, Iwill not forget about it any longer!  What I love about Blue Sage the most is that it’s all about the veggies and the menu is completely tofu-free and soy-free.  Now don’t get me wrong, I like tofu, but the fact that they create dishes simply around the veggies entices me a little bit more :)

I have been battling a sore throat so I ordered a green tea with honey and lemon… I love this cup & saucer!

For my entree, I ordered the Farmhouse Cubano which had grilled eggplant, brie (SO GOOD!), oven roasted tomatoes, roasted garlic rosemary aoili & lots of spinach…

I was seriously contemplating only eating half and then having the other half later in the day but it was just too good to stop eating :)

If you are a vegetarian,vegan, or just someone who loves veggies like me and live in the Bucks County /Philly area, you have to make a trip to Blue Sage… it is a quaint spot with a really friendly staff with a really appealing menu!
