Super-Duper Food #3

Super-Duper Food #3: Natural Peanut Butter

Benefits:

  • “Suffice it to say that eating peanut butter or peanuts has been associated with lower total cholesterol, lower ldl or ‘bad’ cholesterol, and lower triglycerides, all of which are associated with lower cardiovascular disease risk,” says Richard Mattes, Ph.D., R.D., a professor of nutrition at Purdue University.
  • It’s a stick-to-the-ribs kind of food
  • Protects against cardiovascular disease due to high levels of monounsaturated fats
  • Provides protein, vitamins B3 and E, magnesium, folate, dietary fiber, and high levels of antioxidants

How I eat it:

  • Well, we all know how I love to eat it… mostly in three ways:  1.)  On a toasted english muffin & 2.) By the spoonful coupled with a bowl of oats or ice cream & 3.) Smeared onto bananas & apples, but really it could be enjoyed in a flavorful peanut sauce, any kind of baking creation, & smoothies, of course… The possibilities are endless!

How I eat it:

  • I use cinnamon in a lot of ways since it’s extremely versatile… It’s a MUST for oatmeal.  When I buy a new container of oats I will automatically pour in a large amount of cinnamon and shake to distribute evenly to save myself some time in the mornings when I scoop out a serving.  I also mix it in with single-serve yogurt cartons and in cottage cheese (and of course rice pudding).  Occasionally, I’ll sprinkle it into my daily coffee for a twist :)   And of course, I use it when I bake ANYTHING, even chocolate chip cookies & brownies… it’s terrific!
