			<content:encoded><![CDATA[<p>Week 4 is DONE!&nbsp; I can’t believe I have completed 1 successful month of my P90X / Turbo Fire hybrid plan – woo hoo!&nbsp; I’m very excited about coming this far… 1/3 of the way through and lovin’ it.&nbsp; Physically, I’m already noticing small changes and I have dropped four of the five pounds that I have been trying to shed.&nbsp; I feel strong.&nbsp; My muscles are becoming more defined.&nbsp; Mentally, I have a renewed appreciation for what my body can do.</p>

<p>My week was a little different than I had originally planned, but I still pushed hard.&nbsp; On Saturday, I realized that I really missed my dear old treadmill, so I swapped out Cardio X for a treadmill walk at 4mph at an increasing incline.&nbsp; It was a nice and well needed change.&nbsp; Today, I was supposed to do Plyo X, but was feeling a little under the weather AND had to get a lot of housework done in preparation for our annual Mother’s Day bbq so took it easy today and plan on ramping it back up again tomorrow.&nbsp; I was pretty active today though so I was able to log 12K steps, which IMO isn’t bad for not having a solid workout.</p>

			<content:encoded><![CDATA[<p>Happy almost Cinco de Mayo!  Looking for a quick n easy way to celebrate?  Well here&#8217;s something that fits the bill&#8230;</p>
<p>I love the quesadilla burger at Applebees and it is one of my favorites when we go there for dinner.  However, I’m happy to say you can replicate the taste at home at a fraction of the calories and still have room for your own home baked french fries!</p>

<p>Here’s what you’ll need:</p>
<ul>
<li>1 whole wheat quesadilla</li>
<li>1 slice alpine lace swiss cheese</li>
<li>1 Jennie-O turkey burger</li>
<li>Salt and pepper</li>
<li>Few spoonfuls of salsa</li>
</ul>
<p>Here’s what to do:</p>
<ul>
<li>Grill burger into well done.  Meanwhile, place tortilla in fry pan on low-heat.  Add one slice of swiss cheese (or cheese of your choice).  Cut prepared turkey burger in half and layer on one half of the tortilla.  Top with 2 spoonfuls of salsa as desired (probably around ~2 Tbsp).  Sprinkle with salt and pepper.  Fold tortilla over and press until cheese appears to be melted.</li>

<p>This clocks in at 370 calories &amp; it definitely hit the spot!  Next time, I’ll probably add some veggies like sauteed spinach or onions &amp; peppers.  Give it a whirl, I promise you’ll enjoy it!</p>

<p>Here’s what you will need:</p>
<ul>
<li>1 cup cornmeal</li>
<li>1 cup flour</li>
<li>3 T sugar</li>
<li>3 tsp baking powder</li>
<li>1 tsp salt</li>
<li>1/4 cup plain Chobani (0%)</li>
<li>1 cup 1% milk</li>
<li>1 egg</li>
<li>fruit preserves of your choice (1 tsp per muffin)</li>
</ul>
<p>Here’s how to make them:</p>
<ul>
<li>Preheat oven to 425 degrees.&nbsp; Combine dry ingredients well.&nbsp; In a separate bowl, combine the wet ingredients.&nbsp; Mix dry ingredients in with the wet into fully incorporated.&nbsp; Pour batter about 1/2 way full into each well greased muffin cups with liners.&nbsp; Top each muffin with 1 tsp of fruit preserves.&nbsp; I made half with blueberry and half with strawberry.&nbsp; Pour the remaining around of batter on top of the preserves so it is “hiding” as best as you can.&nbsp; I had a few that I couldn’t fully cover… not a big deal!&nbsp; Bake for 18 minutes at 425 degrees or until golden brown.</li>
</ul>

<p>I’m really loving the accountability that my simple logs are providing me and knowing that I’ve posted it on the blog really holds me true to my plans.  I really have a love/hate relationship with the strength training workouts because it is tough to get going, but once I’m half-way through the workout, I don’t want it to stop.  I love the feeling of accomplishment and strength that I feel at the end of these workouts as well.  They keep me focused and on the right track for the rest of the day.  I’ve been working out after breakfast most mornings unless our weekend plans get in the way so that way I get my workout done before the day gets too crazy and I can save pm naptimes for getting things done around the house.  I also do not really enjoy the abs portion of P90X nor can I accomplish it yet, so I’ve been subbing it out with my own abs workout 1x a week.</p>
