Cereal Everywhere

Despite waking up to a light coating of snow and freezing temps, I was craving a bowl of cold cereal this morning! I think it’s because I woke up feeling so refreshed after a good night’s sleep, unlike yesterday! I couldn’t decide on what to have: Cinnamon Puffins or Kashi Go Lean Crunch… so I had both, topped with some almonds & almond breeze! I sprinkled in some extra cinnamon too!

Luckily, the drive to work was fine today, they hyped up this storm so bad that I thought we were going to have a repeat of last week’s storm, but it wasn’t as bad, so that was a relief. Mid-morning I snacked on two clementines. I think this is the only fruit I can eat by itself that doesn’t make me hungrier!

The morning was definitely a lot less chaotic than Monday’s so I was very thankful because I actually got a lot of work done and felt quite accomplished! I had my lunch around 12:30 which consisted of Amy’s black bean soup (with added frozen veggies & Boca crumbles) and a piece of Arnold’s double fiber bread.

Right before I left my desk for the day, I snacked on a piece of Arnold’s bread with chunky peanut butter smeared on it. This was the last slice of Arnold’s bread – can you tell I was trying to use it up before it went bad! The day flew by and when I was done work I headed to the work gym to do cardio.  I did 30 minutes alternating running for 2 minutes, walking for 2 minutes on the treadmill, then I hopped on the elliptical for 20 minutes.

When I got home, I was a little hungry, so I had a small cup of my homemade granola as a post workout snack.

I took a superfast shower and started on dinner. I knew that chicken was going to be on my menu, but I was still thinking about how to prepare it. I decided to smother it with homemade honey mustard sauce (equal parts dijon & honey) and then top it with crushed bran flakes for a nice crunchy fake fried chicken.  As an FYI, I crushed the bran flakes in my VitaMix along with garlic powder, salt, and pepper.

Cereal was consumed in mass quantities today by ME!  I baked it in the oven at 350 degrees for 30 minutes and served it alongside potatoes (sweet potato for me, white potato for Bill) and veggies.

Now I’m off to clean up, pack up our lunches for work tomorrow and then watch The Biggest Loser – let’s hope I make it up for the ending, I’ve fallen asleep the last two weeks at the very end!

Bye Bye Monday

Where has Monday gone?  It flew by, did yours?  It was a busy day at work so that helped the day literally fly by before my eyes, I hope the rest of the work week does so that Friday can get here!

I started out the day with a bowl of semi-simple oats.  I cooked 1/2 cup oats with 3 tbsp egg whites, water and cinnamon in the microwave.  When it was all done, I topped with with 1 T of sliced almonds and ground flax.  On the side I had two juicy clementines.  The citrus flavor really woke me up and got me going on my way! 

I was reading the comments from yesterday’s post and am happy that I’ve inspired a few of you to try the egg white oatmeal combo.  I’m really hooked on it because not only do I love the texture, but it provides an extra protein punch!  Hope you all like it if you try it :)

In terms of eating, I’m really trying to get back into the swing of things with eating something every 3 hours or so.  I find that I feel my best when I do this and since I didn’t do it last week AT ALL, I felt quite icky and out of my element.  Yesterday, I felt so much better since I was refueling myself with great foods throughout the day.  My mid-morning snack consisted of a large apple and 1 ounce of almonds.

Lunch was a new combination that I was looking forward to eating.  I LOVE Amy’s black bean soup, but wanted to stretch out a can to actually be two servings, usually I eat the whole can as a serving :)   I added some leftover vegetables and 1/3 c of boca crumbles to 1 cup of the soup and came up with a delicious and hearty meal.  Alongside I had a piece of Arnold’s double fiber bread that I toasted at work.

My mid-afternoon / pre workout-snack consisted of a plain Chobani and half a scoop of chocolate whey isolate protein powder.  I never tried mixing protein powder & yogurt before but I decided to give it a whirl.  I loved it!  I’m not sure if I would like it using vanilla, but using chocolate kind of reminded me of chocolate milk for some reason :)   And who can resist that?  Not me!

After I ate my snack, I headed to the work gym to do Carrots ‘n Cake’s 45 minute walking treadmill routine.  Sadly, my HRM band is MIA so I wasn’t able to track the calories that I burned, but I know I got a great workout in.  Afterwards, I headed home and popped in Cardio X from P90X.  I forgot to tell ya’ll that I ordered the program, after being inspired by Jen and Jennifer!  I did the first routine on Friday and was SO sore afterwards so I took a few days off in between.  Last night’s Cardio X session wasn’t too bad and I don’t feel horrible sore – yet, so that’s a plus, but it is HARD!  I thought I was in shape, but apparently not.  Hopefully I see some great changes at the end of the 90 days! 

While I did my workout, I was able to multitask and bake dinner!  Before I started, I assembled yet another fantastic casserole creation: 

Taco casserole

  • 3 cups cooked brown rice
  • 1 – 15oz diced tomatoes
  • 1/4 c salsa
  • 3/4 c leftover ground taco meat
  • 1/2 packet taco seasoning
  • 1/4 c boca crumbles
  • 1/2 c cannelini beans
  • 1/2 c shredded cheddar cheese

Mix all ingredients (except for cheese) well and pour into a small square cassserole dish.  Bake at 350 for 30 minutes.  Sprinkle cheddar cheese on top when done and broil on high for 5 minutes or until melted.

Below is my portion.  It made 4 servings, but Bill had 2 of them :)   I LOVE coming up with these casserole ideas because they are delicious and involve a wide variety of food groups.  They are also super easy to assemble and even easier to bake!

Guess what I got in the mail today?  As part of Foodbuzz’ Featured Tastemaker program, I was sent some samples of Quaker’s True Delights bars!  I will have a review of them posted soon, Bill will be helping me review some of them as well :)
