Nut Addicted

Ay yi yi, I realized that today I’ve consumed nuts in mostly all of my meals.  I’m a self-proclaimed nut, so I guess it only makes sense that I consume them as well ;)

This morning I woke up SO tired from being up late last night so I made sure to have a hearty, oaty breakfast!

This bowl contained:

  • 1/2 c oats
  • cinnamon
  • 1/2 c frozen blueberries
  • splash of vanilla
  • 1 T ground flax
  • 1 T PB2
  • 2 T sunflower seeds, mixed in and on top!

Mid-morning, I was really excited for my snack because it involved my favorite combination:  Barney Butter, banana, and Wasa crackers.  Love the crunch & sweetness this snack provided!

For lunch, it was everything but the kitchen sink basically!  PB & J on a ww english muffin with a few sunflower seeds sprinkled in there to simulate the crunchy pb experience alongside some baby carrots, an apple, and a few squares of a dark chocolate bar that my parents gave me for Easter.  Yummo!

My lunch kept me full but I had a busy afternoon/night ahead of me, lots of work and then a virtual meeting for school until 7pm, so I snacked on this bar that I grabbed.  Bill loves all Nature’s Valley bars so I stock up on them for him and he has one everyday so I snuck into his reserves and grabbed one of them in a pinch today.  This was Nature’s Valley Roasted Nut Crunch and I have to tell you I LOVED IT.  SO CRUNCHY, reminded me of a candy bar.  And then, I scooped out the ingredients and found some stuff I didn’t like :/  Ehh, the damage is done.

For my workout, I was really limited with time so I did 8 minute abs, the push up challenge, and then a really brief 15 minute upper body workout using 5 lb. dumbbells at home.  I think the whole workout took a little over 30 minutes combined, but I broke it out for time and efficiency’s sake :)

As I mentioned I had a 7pm virtual meeting for my class so while I attended that, Bill ate dinner alongside of me.  Our dinner was a quick repeat of Sunday night’s dinner simply because I’m trying to use up all of our frozen chicken.  Our freezer is still working, but the fridge is broke.  The fridge guy wants us to unplug our fridge though tonight so it’s properly defrosted by Saturday when he comes to fix it, so tonight was our last night with a freezer.  Luckily, the only thing really left in there was some frozen fruit, a few popsicles, and a few frozen waffles.  I brought all the rest over to my parents’ house to stick in their freezer including our wedding cake top!

Here’s our eats ~ chicken baked in hot sauce with mozarella cheese & mixed veggies.  I did have garlic bread for us but I wound up burning it!!

My school meeting was productive, so that’s a plus, but I’m starving since I didn’t get to have any whole grain goodness at dinner!  I’m definitely getting a snack to have when Lost comes on… I’m famished ;)

It’s Go Time

Only a few more hours until the first Phillies game of the season ~ I can’t wait!  Just so you all are warned, Bill and I have partial season tickets for this year, so you will read many posts about Phillies games from now until October hehe…

Since I knew we’d be eating dinner at the ballpark and since Bill and my parents were all working really hard, I decided to cook them up a hearty lunch that consisted of roasted veggies and tomato-mozarella chicken sausages… and of course, some whole-grain goldfish!

My parents just left after putting in a very hard day’s work.  Our landscaping looks awesome!!  My dad used 2 tons of red stone to put all along the border of our front yard and it looks amazing.  I can’t wait to get some greenery & flowers in there next and it will look perfect!  I know they read the blog so just wanted to say… Thank you so much mom & dad :)

Ok well now it’s officially go time.   The game starts at 8pm, but they are having pre-game festivities that start at 7, plus we want to get down there early to visit our favorite concession stand, Bull’s BBQ!   Be back with a recap post tomorrow am, I’m sure we won’t get home until late tonight so I can’t guarantee a post :)
