Ehhh Disaster

Lunch was packed in a hurry, thus in a CAN… Since I haven’t been eating meat on Fridays, I knew that today would be the perfect day to give this soup a whirl!  I bought this Muir Glen Southwestern Black Bean soup since I had a coupon for it at Giant, along with an apple & some Wasa crackers.  The soup was TOTALLY yummy!  I really think that it is a REALLY close tie to Panera Bread’s black bean soup which reigns supreme according to my tastebuds.  I loved the chunks of carrots & corn and the soup had a hint of spice that I loved, not to mention it was chock full of hearty black beans.  I highly recommend it :)

For my mid afternoon snack, I had some PB Puffins (yay) and a Breyers Light Yogurt, lemon meringue flavored…

I just finished attempting a baking experiment for my dad’s birthday but it didn’t exactly go as planned I’m sad to say… You will see pictures of the semi-disaster tomorrow!

Now Bill and I are off to celebrate our 6 month wedding anniversary in style… where will we be celebrating at?  Lowe’s, of course!  I mean, wouldn’t you want to go there too haha… But seriously, we are excited because we are going to go buy all of our appliances for the big move in 2 weeks LOL… yes, believe it or not, it’s an exciting night out hehe :)

I decided  not to blog most of my eats today because I spent 99% of the day working on my wedding album.  I have finally narrowed down our 1700 pictures to 300!  It was quite a feat and now I need to narrow them down just a bit more, my goal is to work on it 20 minutes each day because I really want to get it mostly done before we move because I know my free time will be spent doing projects around the house!

I did have a yummy snack that I wanted to share with you though… This morning after I realized I wasn’t going to work, I decided to make another batch of almond butter except this time I kept it chunky and added pecans, vanilla, and cinnamon.  I microwaved a sliced apple and dipped it into the almond butterHoly Yum :)

For dinner, Bill and I cooked together since we were both home, which usually never happens!  We eat dinner together every night but usually I cook before he gets home and then we eat together so it was a fun change :)   Since it’s nasty out, we decided to have one of my favorite comfort food ideas:  breakfast for dinner!

Bill is the king of omelets and the one he made me tonight basically testifies to that… He used 1/4 cup egg whites & 1 egg, spinach, and 2 thin slices of pepperjack cheese on mine.  On the side I made us turkey sausage & roasted potatoes.

Seriously, if I had my wish, I could eat breakfast for every single meal of the day, no lie.  It’s my favorite meal of the day and the possibilities are endless!!!

Ok well I hope you guys all have a great night.  I will be back tomorrow, I miss regular food blogging terribly :) Before I go, I found this article to be super interesting & very true – great tips for boosting your energy!  Now I’m off to settle in on the couch with a cup of decaf tea and get ready for a TWO hour 24 episode that starts at 8pm!
