Crunchy Crunchy

Hi Peeps :)   Thanks for all the great comments on the Loving Yourself Wrap-Up post earlier, I really want to thank you all!

Today’s breakfast was FABULOUS.  It truly was a great way to start off the day, considering that this morning involved me hitting snooze oh say maybe 5 times.  Yeah, it was one of THOSE kind of mornings!  Since I was rushing around, stove-top oats seemed like a good breakfast idea.  I combined the following and let it simmer:

  • 1/2 C old-fashioned oats
  • water (eyeballed it)
  • 1/2 C frozen blueberries
  • splash of vanilla
  • heavy dose of cinnamon

When it was done, I poured it in my cereal bowl and topped it:

  • splash of Almond Breeze
  • 2 T chopped pecans
  • T of ground flax

My bowl kept me satisfied for 3 hours and then I dove into my morning snack which was a small apple and a pack of Emerald almonds and walnuts.

In an effort to combine my fave sandwich for lunch (pb&j) with veggies & lean protein… I packed a pb&j sandwich on a ww english muffin alongside sliced carrots & celery with ff cottage cheese for dipping!  Lots of crunchiness goin’ on during this meal, I’m sure you could hear my chomping from a mile away… I did an awful job of taking this picture, but you can barely see my chocolate graham Goldfish on the side… I love these guys ~ can you tell there was a big sale on Goldfish at Target this weekend?  For those of you who were wondering, that’s where I found the whole-grain corn goldfish at too… I think they are brand-spanking new!

I’m actually skipping the gym today and going to do the P90X Core Synergistics session at home instead, since I’m pretty tired from the busy weekend and don’t feel like doing that AND the elliptical.    I have the following pre-workout & post-workout snacks:  2 homemade banana larabars :)   They are the last ones – *tear* :(

Big Sunday

Last night, as promised, I had a little dessert, in smoothie form using my Vitamix of course :)   I combined two ripe bananas with a little chocolate syrup, milk, and ice for a deliciously sweet treat!

We had a late night, well not both of us.  Just me, that’s because I could not sleep for anything last night which is so unlike me.  I saw every hour pass by :(   I think the last time I saw the clock it was 4am and then I finally fell asleep!  When I finally got up, I felt like it was the perfect morning to make a yummy breakfast:  french toast!

I used egg whites, 2% milk, vanilla, & cinnamon alongside some Arnold’s double fiber bread.  When the french toast was done I kept them warm in the oven while I sauteed two ripe bananas with cinnamon, vanilla, and maple syrup.  It was the perfect way to start off this Superbowl Sunday.

After breakfast, Bill and I cleaned the house and got some “chores” done.  Then it was time to do P90X and to my surprise, Bill actually did it with me today :)   We did Kempo X which was a LOT of fun and a great workout.  My HRM reported that I burned 420 calories.  Bill asked if we were going to have a recovery drink (half joking b/c Tony Horton said it quite a few times at the end of the DVD) so we both decided that we were in the mood for a protein smoothie.

I used a new vanilla protein powder I picked up made by EAS and mixed it with a cup of frozen blueberries, 1 cup ice, and 3/4 cup of 2% milk.  It made two servings and was really yummy, I loved the mix of vanilla & blueberry!

I have been meaning to post about the little package I received in the mail this week from Jess.  I won her vitamin giveaway contest and look at the cute & yummy vitamins I got!  Thanks Jess!  This is awesome :)   I loved the little “Congrats” card – how cute!

Now we are getting ready for our little Superbowl get together that we are having at our house.  For the last few years, we have been having a few of our friends over for the game so it’s kind of tradition :)   I doubt I’ll be posting later tonight because The Office is on after the Superbowl, so I’ll probably be back with a recap tomorrow night and be posting on a day delay ~ we shall see!
