I must say this was an incredibly difficult decision – I always got excited to see who the winner of this contest would be each week, but this week I wasn’t as excited because I loved every single recipe! I thought it was amazing how innovative and delicious all of the recipes were – you guys were SO creative!! I mean really would would have thought about mixing pumpkin with pasta, chicken, cranberries, etc… the combinations I received were limitless and now I have a WHOLE bunch load to add to my “must make” recipe list! Anyway, I just wanted to thank you all for letting me host the contest this week on my blog. In the spirit of Iron Chef again, I must choose one though to “reign supreme”, so I decided to pick the entry that seemed most intriguing to me and the most delicious and MAKE it. If it tasted as good as I thought it would, and I didn’t receive any other last minute entries that would “sway” my decision, then I would select it as the winner. Well, after two bites of this, both Bill and I decided that it had to be the winner.
What did I make?

The recipe was not only easy to make but AMAZINGLY delicious – she wasn’t kidding when she said it tasted like Thanksgiving! Bill loved how the chicken was super moist (due to the pumpkin) and I loved the crunch that the pecans provided as well as the sweet & seasonal flavor that the star ingredient: pumpkin, provided! Way to go Meghann - what a super original and awesome recipe!!! Please send me an email when you get a chance so I can send you your prize
I’m waiting to hear confirmation back from a blogger regarding hosting next week’s submission. So as soon as I know that they are willing to host the competition, I will be back with a post immediately announcing who it is

Now onto the rest of my eats…
I was in a total baking mood on Sunday so I decided to try my hand at Andrea’s Stove-top Applesauce. I left the skins on though and added vanilla extract. It was fantastic and I served it up in a roasted carnival squash (alongside Meghann’s Pumpkin Pecan Crusted Chicken).

I also made Bella Eat’s Pumpkin Cranberry Bread:

I had a slice after dinner and it was awesome. Not too sweet, but hearty! I used 3 cups of flour like she suggested.
What a great day. Now it’s off to start a three-day workweek – what could be better? Perhaps the end of a three-day workweek!
