Despite waking up to a light coating of snow and freezing temps, I was craving a bowl of cold cereal this morning! I think it’s because I woke up feeling so refreshed after a good night’s sleep, unlike yesterday! I couldn’t decide on what to have: Cinnamon Puffins or Kashi Go Lean Crunch… so I had both, topped with some almonds & almond breeze! I sprinkled in some extra cinnamon too!

Luckily, the drive to work was fine today, they hyped up this storm so bad that I thought we were going to have a repeat of last week’s storm, but it wasn’t as bad, so that was a relief. Mid-morning I snacked on two clementines. I think this is the only fruit I can eat by itself that doesn’t make me hungrier!

The morning was definitely a lot less chaotic than Monday’s so I was very thankful because I actually got a lot of work done and felt quite accomplished! I had my lunch around 12:30 which consisted of Amy’s black bean soup (with added frozen veggies & Boca crumbles) and a piece of Arnold’s double fiber bread.

Right before I left my desk for the day, I snacked on a piece of Arnold’s bread with chunky peanut butter smeared on it. This was the last slice of Arnold’s bread – can you tell I was trying to use it up before it went bad! The day flew by and when I was done work I headed to the work gym to do cardio. I did 30 minutes alternating running for 2 minutes, walking for 2 minutes on the treadmill, then I hopped on the elliptical for 20 minutes.

When I got home, I was a little hungry, so I had a small cup of my homemade granola as a post workout snack.

I took a superfast shower and started on dinner. I knew that chicken was going to be on my menu, but I was still thinking about how to prepare it. I decided to smother it with homemade honey mustard sauce (equal parts dijon & honey) and then top it with crushed bran flakes for a nice crunchy fake fried chicken. As an FYI, I crushed the bran flakes in my VitaMix along with garlic powder, salt, and pepper.

Cereal was consumed in mass quantities today by ME! I baked it in the oven at 350 degrees for 30 minutes and served it alongside potatoes (sweet potato for me, white potato for Bill) and veggies.

Now I’m off to clean up, pack up our lunches for work tomorrow and then watch The Biggest Loser – let’s hope I make it up for the ending, I’ve fallen asleep the last two weeks at the very end!
