Cereal Everywhere

Despite waking up to a light coating of snow and freezing temps, I was craving a bowl of cold cereal this morning! I think it’s because I woke up feeling so refreshed after a good night’s sleep, unlike yesterday! I couldn’t decide on what to have: Cinnamon Puffins or Kashi Go Lean Crunch… so I had both, topped with some almonds & almond breeze! I sprinkled in some extra cinnamon too!

Luckily, the drive to work was fine today, they hyped up this storm so bad that I thought we were going to have a repeat of last week’s storm, but it wasn’t as bad, so that was a relief. Mid-morning I snacked on two clementines. I think this is the only fruit I can eat by itself that doesn’t make me hungrier!

The morning was definitely a lot less chaotic than Monday’s so I was very thankful because I actually got a lot of work done and felt quite accomplished! I had my lunch around 12:30 which consisted of Amy’s black bean soup (with added frozen veggies & Boca crumbles) and a piece of Arnold’s double fiber bread.

Right before I left my desk for the day, I snacked on a piece of Arnold’s bread with chunky peanut butter smeared on it. This was the last slice of Arnold’s bread – can you tell I was trying to use it up before it went bad! The day flew by and when I was done work I headed to the work gym to do cardio.  I did 30 minutes alternating running for 2 minutes, walking for 2 minutes on the treadmill, then I hopped on the elliptical for 20 minutes.

When I got home, I was a little hungry, so I had a small cup of my homemade granola as a post workout snack.

I took a superfast shower and started on dinner. I knew that chicken was going to be on my menu, but I was still thinking about how to prepare it. I decided to smother it with homemade honey mustard sauce (equal parts dijon & honey) and then top it with crushed bran flakes for a nice crunchy fake fried chicken.  As an FYI, I crushed the bran flakes in my VitaMix along with garlic powder, salt, and pepper.

Cereal was consumed in mass quantities today by ME!  I baked it in the oven at 350 degrees for 30 minutes and served it alongside potatoes (sweet potato for me, white potato for Bill) and veggies.

Now I’m off to clean up, pack up our lunches for work tomorrow and then watch The Biggest Loser – let’s hope I make it up for the ending, I’ve fallen asleep the last two weeks at the very end!

Foodie Wrapup

Whew – what a fun, foodie Sunday we had! Boy am I stuffed to capacity too! I’m going to try to crank this post out superfast because the idea of being behind a day didn’t sound pleasant to me so I decided to spare the extra time tonight and show you my eats so I can get back on track with regular blogging tomorrow :)

We started the festivities around 4:30 we only had two other couples over so it was basically all of us decked out in Eagles jerseys and sweatpants - yes, we are all aware the Eagles were not playing, but we were still showing our spirit LOL.

We had a variety of fingerfoods that included:

  • Salsa & Tostitos
  • Pretzels & Honey Mustard
  • Veggies & Ranch Dip
  • Spinach Dip

For our main course, we had hoagies that I picked up from a deli by my parents’ house and a TON of boneless wings that our friends brought over. The flavors ranged from garlic, buffalo, honey bbq, terriyaki, etc… you get the idea!

I had a turkey hoagie with no cheese and tons of hot peppers & spicy mustard – it was delish! I wish they made whole wheat rolls, but oh well…

I definitely had my share of wings & dips but didn’t feel like photographing each one so I hope you understand :)

For dessert, I baked super chocolate & peanut butter brownies. I used a plain brownie mix and added some chopped up dark chocolate Hershey Kisses & chunky peanut butter to the batter. I baked them according to the package, topped them with vanilla icing and chocolate wafers. They were delish. I had two small ones and could have kept eating them!

What did you guys think about how the Superbowl ended? Although we were rooting for the Steelers, we really weren’t cheering like we would if the Eagles were in the game!  We played some block pools so that kept the game interesting, but sadly Bill and I didn’t win any of them!  One of our friends saw my P90X tapes so that led to an interesting conversation all about the program, seems everyone is a fan!

We are exhausted now so we’re going to try to clean up and make it through the Office. Tomorrow’s going to be a rough morning!
