Took The Plunge

So I took the plunge today… I tried it… yup, I tried spicy oats… after seeing them in their delicious form on Green Dog Wine’s blog, I couldn’t resist to try them and decided to stop being a scaredy cat!  Well, I must say I am a HUGE fan of them ~ I really wish I tried them sooner!

For my bowl, I used:

  • 1/2 c oats
  • LOTS and LOTS of buffalo hot sauce
  • 2 sliced american cheese
  • salt & pepper to taste

I popped it all in the microwave for 2 minutes, gave it a good stir, and then added more hot sauce.  It was so hot but I loved it.  It was such a nice change to eat something savory for breakfast instead of something semi-sweet.

Mid-morning, I snacked on some pecan halves and an apple… I subbed the pecans in place of the almonds I’ve been having since i’m all out :)   It was a yummy texture & I felt like it kept me more full than the almonds, but I think that might be in my head!

For lunch, I had a wide assortment of “courses”:  Blueberry Chobani, two clementines, and pb&j on Arnold’s bread.

Mid-afternoon before I headed to the gym I snacked on a Pure Protein bar.  I never had the chocolate chip flavor before and thought it reminded me of cookie dough, I think I’m going to stock up on this flavor next time.

At the gym I did 45 minutes of cardio on the elliptical.  When I got home, I did 15 minutes of Ab Ripper X.  It was tough just like before and didn’t get any easier.

For dinner, we had an easy one:  Target brand Archer Farms Margarita Pizza.  I topped it with a can of Italian Diced Tomatoes, garlic, pepper, and crushed red pepper.  It came out awesome!  It was thin crust and came out super crispy!

We also had our standard mixed green salad on the side with Asian dressing.

After dinner I had a caramel dolce sugar free Jello topped with grape nuts.  I haven’t had one of these Jell-O cups in a while and used to be hooked on them :)

*Please say some prayers for a police officer that was killed in our area today in a traffic accident.  It’s such a sad story and I’m sure his family needs lots of prayers*

Nasty Storm

Hi blogland… Whew, were you hit with the nasty winter storm today like I was? It did not make driving to work today pleasant at all, plus Bill got to work from home. I was very mad I couldn’t do the same! We got a substantial amount of snow and then a dose of freezing rain ~ lovely. Luckily I carpool with my friend and made him drive us to work today because if I tried to brave the weather, who knows what would have happened!

Despite it being super chilly outside, I was craving cold cereal: Kashi Go Lean Crunch to be exact. I had a bowl topped with Almond Milk and Pecans. Such a yummy breakfast treat :) It made the thought of going outside slightly less awful.

I also had some green grapes on the side – if you can’t tell they are near the end of their life!

My snack mid-morning was two clementines and an ounce of almonds. These are the last of my whole almonds, so you won’t be seeing these again until I stock up over the weekend, sadly! Our clementine stockpile is dwindling away too!

My lunch today was eating during a phone meeting and I had a slice of Arnold’s bread w/ pb&j alongside half a bag of baby carrots. Thank goodness for my mute button or they would have heard me crunching away!!!

A short while later, I tried out one of these EAS chocolate protein drinks. They were on clearance at Target so I decided to give it a whirl and see how they were…

Thoughts? Definitely has to be consumed ice-cold. Mine was only barely cold and it wasn’t all that great. I managed to get it down, but it reminded me of lukewarm chocolate milk… oops. However, I must say the whopping 17g of protein in it, kept me quite full throughout the afternoon AND a tough workout.

For my workout today, I did P90X Shoulders & Arms and then the Ab Ripper X. I only have 5lb. weights in my house right now, my heavier weights are at my parents house, so doing it with 5lbs. was tough, but not as challenging as it could have been, so I think next time I’m going to attempt to use 8lbs. The Ab Ripper X was OH MY GOODNESS – tough!!!!! It made me realize that I ALWAYS slack on abs and have no strength, I need to work on that :)

After my tough workout, I needed a small snack before dinner so I had more Kashi Go Lean Crunch & Almond Milk.

I was really not planned for dinner so it was just a mish-mosh stir fry which turned out to be quite yummy AND easy!

I just cut two uncooked chicken breasts into bite size pieces and sauteed in a large stir-fry pan over medium to high heat. Then I added a bag of frozen red pepper, green pepper, and onions to the pan. I tossed in the last of a bag of frozen peas, too! I told you this was a mish-mosh. Meanwhile, I boiled some whole wheat pasta on the side. When the pasta was done, I poured it into the pan (with veggies & chicken). I added black pepper, crushed red pepper, basil, and 3 tablespoons of italian dressing. I stirred it all around so everything was coated evenly and then served it up on two plates for Bill and I. It’s funny because I didn’t plan this meal out but I think it was one of the best “creations” that I’ve come up with recently. It was light, fresh, and wholesome :) Have you had a similar experience with creating dinner recipes?

Of course, we had a salad with our “stir-fry”. For some reason whenever I have pasta, I MUST have a salad :)

Now we’re getting ready for LOST! Speaking of TV, what did you guys think of Biggest Loser? Would you believe I fell asleep during the last 5 minutes?! :( So sad, I still have yet to find out who was kicked off, I have to google!

Anyway, I am craving hot chocolate so I made up some using my Vitamix method and also had a 100 calorie package of Girl Scout cookies that my mom gave me :) Thanks Mom, these are yummy! They remind me of Cinnamon Toast Crunch, believe it or not!
