Hey everyone! Matt here from Run, Live, and Enjoy! It’s an honor to be a guest blogger for you guys!

Since this is a food blog, I thought I would give you guys a little taste of what goes into my mouth every day. But first, here’s a little background on me. I’m 19, and a sophomore at the University of Alabama. I’m currently a Business Major, but not sure exactly what field. Hopefully I can figure that out soon! I run about 70 miles a week and I am currently training for my first marathon in April. Here’s what I eat!

I usually run first thing in the morning, around 6 or 6:30. I usually just wake up, drink some coffee, and head out. Today, I did a 9 mile easy run at about a 7:10 pace. I try to mix up my speed, pace, and distance during most of my runs just to keep my body guessing and add some variety to my workouts so I don’t get bored. I’m usually pretty hungry for some breakfast when I get back…

(1/2 cup of oats cooked in 1 cup vanilla soymilk with a banana whipped in, raisins, 2 TB peanut butter, and flax sprinkled on top; 2 eggs on the side).

Morning snack…

Lunch…

(Turkey and roast beef sandwich on dark german wheat bread; fuji apple; and some kashi crackers some with peanut butter). Sorry about the bite in apple; I was hungry!

Afternoon snack…

Dinner…

(Shrimp and chicken teriyaki stir fry over soba noodles). I’ve been on a huge stir fry kick lately. I actually had it the next night but tried it with udon noodles and had some miso grilled salmon on top. Here’s what it looked like…

I usually eat a bowl of granola or cereal about 5 minutes before I go to bed because I find it gives me energy for my run in the morning. My favorites are Kashi honey sunshine, puffins, and bear naked granola. A large bowl of cereal always helps me sleep like a baby!

So that’s pretty much what I eat in a day. It might not look pretty, but it gets the job done. I know it’s far from “perfect” but in my opinion, you only live once. I eat fairly healthy, I fuel my body well, and I enjoy what I eat. That’s what’s important right? Smiles!

Today I was not all smiles since it was Monday morning, so I decided to make a breakfast that would make me smile!

For the eyes:  a Thomas’ whole wheat bagel topped with ff whipped cream cheese and strawberry (left) & grape (right) jelly.  I couldn’t decide on what jelly to use so I used both :)   For the smile:  a sliced banana topped with natural chunky pb

Now, if that doesn’t make you smile on a Monday, what will?!?!?!

Mid-morning, of course I was going through oats withdrawal, so I cooked up a packet of Quaker Weight Control oatmeal.  I’m loving having a reverse breakfast by the way, for some reason I feel more refreshed in the morning when I’ve been having alternative breakfasts when I first wake up and then oats mid-morning.

As much as I love peanut butter & jelly, I’ve been feeling a little burnt out by it (plus I’ve been going through jars of pb like crazy!), so I decided to switch it up and break into the Dietz & Watson bbq chicken lunchmeat that I bought for Bill yesterday at our local deli.  I had it on two slices of Arnold’s whole wheat bread along with a slice of American cheese.  On the side I had a nice juicy apple and whole grain goldfish!  I was so excited to break into the goldfish because I haven’t had them in a while :)   It’s the little things in life that make me smile yet again…

Right before I headed to the gym at 4pm, I snacked on a tangerine and half of the White Chocolate Macadamia Nut Clif bar that Gliding Calm gave me as part of the cupid package!  I was excited about this guy ALLLLLL day, you have no idea.

I’ve seen many bloggers post this bar on their blogs and I was so jealous because they have not yet made their way to my area, but luckily I got to try it out.  I knew you’d all be curious as to what it looked like so I opened up the package before bringing it to work with me so you can scope out it’s yummy goodness…

Thoughts?  Ok so basically if I got to eat one of these before every workout, I would be working out 24/7 – that’s basically the best way to describe just HOW GOOD this bar was.  I felt like I was eating a blondie brownie!!!!!  Mmmmmm, OK, so yeah, on my list of things to do tonight is to search online for where they sell these bars at near me ~ I think I’m already addicted.  It was chewy, sweet, and chunky ~ delish!

Ok well, now it’s off to the gym.  My plan is to do 30 minutes of elliptical here and then head home and do a condensed version of P90X Core Synergistics.  Then of course, I’ll start cooking dinner…
