Hey everyone! Matt here from Run, Live, and Enjoy! It’s an honor to be a guest blogger for you guys!
Since this is a food blog, I thought I would give you guys a little taste of what goes into my mouth every day. But first, here’s a little background on me. I’m 19, and a sophomore at the University of Alabama. I’m currently a Business Major, but not sure exactly what field. Hopefully I can figure that out soon! I run about 70 miles a week and I am currently training for my first marathon in April. Here’s what I eat!
I usually run first thing in the morning, around 6 or 6:30. I usually just wake up, drink some coffee, and head out. Today, I did a 9 mile easy run at about a 7:10 pace. I try to mix up my speed, pace, and distance during most of my runs just to keep my body guessing and add some variety to my workouts so I don’t get bored. I’m usually pretty hungry for some breakfast when I get back…
(1/2 cup of oats cooked in 1 cup vanilla soymilk with a banana whipped in, raisins, 2 TB peanut butter, and flax sprinkled on top; 2 eggs on the side).
Morning snack…
(My favorite flavor!)
Lunch…
(Turkey and roast beef sandwich on dark german wheat bread; fuji apple; and some kashi crackers some with peanut butter). Sorry about the bite in apple; I was hungry!
Afternoon snack…
(Yogurt with puffins, bear naked granola, and chopped walnuts).
Dinner…
(Shrimp and chicken teriyaki stir fry over soba noodles). I’ve been on a huge stir fry kick lately. I actually had it the next night but tried it with udon noodles and had some miso grilled salmon on top. Here’s what it looked like…
Dessert…
(Accidently demolished that box!) Tasted pretty good though.
I usually eat a bowl of granola or cereal about 5 minutes before I go to bed because I find it gives me energy for my run in the morning. My favorites are Kashi honey sunshine, puffins, and bear naked granola. A large bowl of cereal always helps me sleep like a baby!
So that’s pretty much what I eat in a day. It might not look pretty, but it gets the job done. I know it’s far from “perfect” but in my opinion, you only live once. I eat fairly healthy, I fuel my body well, and I enjoy what I eat. That’s what’s important right?
