Rich Oats

I finally got around to reading through and answering everyone’s comments from my three posts yesterday… Once again, the blogging community brought a huge smile to my face with the well wishes and excitement regarding the wedding!  I am so lucky to have such sweet & great readers!  I can’t wait until all this craziness is over so I can focus on the blog as a “side project” and really put more time into it then I’m doing now… I have a ton of great ideas that I can’t wait to focus on!

Anyway, now onto the food stuff… this morning I tried “coffee” oats… I cooked up a 1/2 cup of oats, mixed in some Kashi Go Lean, the remainder of my fresh strawberries, some flax, and then poured a 1/2 a cup of leftover coffee (which did not fit into my cup) into the mix… It was yummy AND rich ~ now I know why this combination has been a hit on other blogs!

I have a meeting that will take me right into lunchtime, so I decided to try one of these South Beach Diet High Protein Cinnamon Raisin cereal bars as a mid-morning snack… I used to be hooked on them a few years ago, so I’ll let you know what I think of them in my lunch post!

On a side note, can you believe that it is WEDNESDAY?!  It’s fantastic… I wish every week was a four day workweek!  Oh and today is my last Wednesday that I’ll be in work as a single lady!

Flyin’ By

Today sure is flying by… I can’t believe it’s lunchtime already, since I have no idea where the morning went! For lunch, I decided on one of my very favorite combinations that I discovered over the weekend! I chose to take a picture of it on a plate because it was much more appetizing this way, picture-wise, then it looks after I smooshed the two slices of bread together and wrapped it up! I used two slices of Arnold’s wheat bread and spread both non-fat cottage cheese and blueberry preserves… Again, the taste was delicious because I find that lately, I am loving the semi-salty ‘n sweet combination! On the side, I had the last 2 clementines :(

My planned mid afternoon snack is a Dannon Light & Fit strawberry yogurt with some Kashi Go Lean mixed in… Dannon recently “re-formulated” their yogurt and I know some people (like my mom) were not impressed, but honestly I didn’t taste a difference when I had one this weekend… maybe because I mix things into it instead of eating it plain?

Tonight, we have our final meeting with our DJ to go over our song choices and bridal party announcements… I can’t believe it’s one of our last wedding appointments ever!
