French Toast Oats

Woke up this morning with a craving for both French Toast & Oats, couldn’t decide between the two so I decided to combine them!  I was a little nervous of how it would turn out or if it would even really taste like French Toast, especially since I used the entire egg and most times I only add in the whites, but I gotta say I was really impressed and I think this will become a staple in my oatmeal rotation :)

French Toast Oats

  • 1/3 c old fashioned oats
  • 2/3 cup 1% milk
  • 1 egg
  • a large amount of cinnamon, you be the judge
  • 1 tsp vanilla extract
  • 1/2 sliced ripe banana
  • chopped walnuts
  • drizzle of real maple syrup
  • 1 T ground flax

I honestly think the combining / cooking technique is what makes this taste like french toast; in fact, it would probably taste better if it was cooked stove top, but fake “slow cooking” in the microwave works like a charm.  I added the dry oats to a bowl, added in 1 beaten egg, cinnamon, vanilla extract and milk.   Stir mixture well until all combined.  Microwave for 30 seconds, remove and stir.  Repeat this process again. Add in sliced banana, stir, and microwave again for 30 seconds (all in all, cooking time should be 1 minute 30 seconds depending on the strength of your microwave).  When oats are at desired texture (if too runny, keep cooking!), stir in ground flax seed, top with chopped walnuts and add that drizzle of real maple syrup.

Total Comfort

The rain hasn’t stopped… still pouring, still gloomy… and to make matters worse, it’s my dad’s birthday (!!!!) and my parents have been without electricity since yesterday afternoon!  Ugh… Luckily, I was able to take advantage of a gloomy day to prepare a scrumptious b-fast…  I got up early this morning so I was able to make it a little bit ahead of time and let it soak and the flavors meshed together well.

Oatmeal Pudding

Mix the following ingredients well:

  • 2 cups old fashioned oats
  • 1 1/4 cups 1% milk
  • 1/8 c brown sugar (I think next time I may omit this)
  • 1/8 c maple syrup
  • 1/2 cup chopped walnuts
  • 2 ripe bananas, sliced
  • 1 egg, 1 egg white
  • 1 tsp baking powder
  • 1 T cinnamon
  • 1 T vanilla extract
  • 1/2 tsp nutmeg
  • 1 tsp salt

Pour mixture into a sprayed baking dish.  I let it sit for about 2 hours covered in the fridge; however, I think the longer you let it sit, the better it will turn out.  Bake at 425 degrees for 20-30 minutes or until semi-firm.  Scoop out a serving, the consistency will be somewhat mushy and very moist, top with a spoonful of peanut butter and enjoy!
