In an effort to not only have a quick and easy meal, but also to clean out our freezer which is jam-packed with frozen leftovers & bags of frozen veggies (not to mention Vitatops, veggie burgers, and frozen fruit), I decided to use a Bertolli Mediterranean meal that I had stored away for nights that I didn’t really feel like cooking. This variety included penne pasta, shrimp, cherry tomatoes, asparagus, and garlic sauce. At 320 calories per serving, it was a pretty filling meal. Plus, it wasn’t expensive either. I bought this bag at Target when they were on sale for $5. I sprinkled mine with Parm cheese
Now I know to make this at home wouldn’t be too difficult either, but it took 8 minutes from start to finish so it was a sure thing for last night.

On the side, I had a mixed green salad with asian dressing. Delish!

After dinner we watched Heroes from Monday which was SOOOOO good… then Office (hysterical, but that goes without mention) and 30 Rock… I recently started watching 30 Rock and Bill and I are hooked… I seriously laughed harder last night during that show than I have in a while, I was crying

Today means more than that to us because it is our 5 month wedding anniversary
I can’t believe it’s been 5 months already!!! It flew by!!!
