I Can See Friday

I attempted to post this late last night but my internet was down (blame Comcast!)…

I’m still having difficulty getting up in the mornings! Although I did wake up when my alarm went off, it took everything in my power to actually physically get up… I can’t wait for my body to get used to this routine.

Since I got up at my normal time, I was able to get ready quickly and have a good 15 minutes to enjoy this delicious bowl of oats. I cooked it with a small chopped banana and then topped it with flax, pom seeds (the very LAST of them!!!!!), and sliced almonds. It was delicious and I’ll dearly miss my pom seeds. Do you know their peak season only runs until January? I noticed the pomegranate display was missing from my local Giant last week and decided to google them to see why. I’m so terribly sad ~ they were a staple in my breakfasts & yogurt for the last few months!

My work mornings have been super busy lately because I’ve been training my replacement at work. Luckily, I managed to snack on this Kashi TLC bar while training him ~ I hope he didn’t mind I was chewing haha… It’s been a while since I’ve had these bars, but I cleaned out our little granola bar/snack bar section of our pantry and found a few left. I love the flavor combination in this particular variety.

I finally got to have lunch around 12:30 and I was pretty hungry at that point. I packed a turkey, jalapeno & homemade hummus sandwich on Arnold’s double fiber bread and had the apple alongside of it. No more honeycrisps left :(

I wound up eating the clementine a little later. The Arnold’s bread is deliciously thick and hearty, but I guess due to the extra fiber, it keeps me really full!

I added the turkey to my lunch today because I knew I needed a more substantial meal due to my schedule. My manager & co-workers threw a “going away” happy hour for me from 5:30-7:30 so I knew I didn’t want to eat dinner at the bar!

Apparently, Christmas is not over yet! People brought in all of their leftover candy, cookies, etc., I settled for the light & yummy choice and had a candy cane!

I made sure to pack a Pure Protein bar with me and ate it around 4:30 so at least I knew it would hold me over until I got home and could eat something decent! I didn’t get to take a picture, so here’s a reused picture…

I also had the last handful of my “at work almond stash”… probably maybe 10 almonds or so, I’m not quite sure!

When I got home, I was really tired, it was around 8:15pm when I finally got home :/

I really wanted to get some kind of activity in today and was planning on doing 8 minute abs or a 20 minute yoga DVD, but all I felt like doing at that moment was taking a hot shower, putting my pjs on, and eating a quick dinner. I had a Morningstar veggie burger on top of my last Arnold’s sandwich thin and topped it with the last of my peppers and homemade hummus (need to make more!). And then I really was craving a salad, so I made one…

And then at that point, I was kind of full, but my sweet tooth kicked in, so I had three small-ish (they are on a napkin to show you their size) homemade cookies… one of Bill’s aunt’s chocolate chip cookies, an oatmeal-raisin (that I made a while back), and a whole wheat pecan ball (that I made a few weeks back)… Once I ate these, even though they were tiny, I was REALLY full… I think my body missed exercising today!

Are you guys all tired & worn out from the first full week back to work? I am exhausted more so than normal and really can’t get into the swing of things! I seriously cannot wait for Friday to be here ~ it’s soooooo close!

The End

Bill and I slept in a bit today which was oh – so – nice! We figured it would be a good day to do so, since we unfortunately have to return to work tomorrow… Bill had to work a few days last week, but I haven’t been at work since December 22nd ~ I know tomorrow morning’s going to be a toughie!  It’s definitely THE END of a great, relaxing holiday vacation!

I started off with coffee & breakfast at around 8:45am… This oatmeal combo contained:

  • 1/2 c oats
  • 1 c water
  • generous sprinkling of cinnamon
  • 2 tsp pom seeds
  • 2 tbsp sliced almonds
  • 1 tsp flax
  • 1/2 pb cookie larabar

It was a flavorful and fabulous bowl of oats that kept me satisfied until around 12:30pm! It’s amazing that this bowl would definitely not keep my hunger at bay Mon thru Fri, but for some reason it did today! Maybe I was still full from yesterday :)

When it was lunchtime, I smeared some homemade hummus on two slices of Arnold’s fiber bread. I noticed it was on sale today when I ran to the grocery store, so I decided to give it a try. It was amazing! It was really chewy & had a great texture to it, now I know what the fuss is about. On the side I had some baby carrots, leftover shrimp, and a sliced apple (thanks Dad!).

We spent the afternoon prepping both mentally and physically for the week. I got in a workout using one of my DVDs and did some ab work.

Dinner tonight was super easy & quick since we didn’t want to take too much time away from watching the Eagles game: leftovers!

Bill had his leftover chicken parm, while I enjoyed my leftover flounder :) On the side, we each had leftover baked ziti & a meatball that Bill’s Aunt Grace had given us to take home yesterday.

Now, true to my “goals”, I am shutting the laptop and relaxing for the rest of the evening to prepare for the week ahead!

Also, I should explain that my commenting on all of your blogs is probably going to cease yet again Mon-Fri due to the busy work week, but know that I am reading, it’s just too time consuming for me to comment :(
