Quesadilla Turkey Burger

Happy almost Cinco de Mayo!  Looking for a quick n easy way to celebrate?  Well here’s something that fits the bill…

I love the quesadilla burger at Applebees and it is one of my favorites when we go there for dinner.  However, I’m happy to say you can replicate the taste at home at a fraction of the calories and still have room for your own home baked french fries!

Here’s what you’ll need:

  • 1 whole wheat quesadilla
  • 1 slice alpine lace swiss cheese
  • 1 Jennie-O turkey burger
  • Salt and pepper
  • Few spoonfuls of salsa

Here’s what to do:

  • Grill burger into well done.  Meanwhile, place tortilla in fry pan on low-heat.  Add one slice of swiss cheese (or cheese of your choice).  Cut prepared turkey burger in half and layer on one half of the tortilla.  Top with 2 spoonfuls of salsa as desired (probably around ~2 Tbsp).  Sprinkle with salt and pepper.  Fold tortilla over and press until cheese appears to be melted.

This clocks in at 370 calories & it definitely hit the spot!  Next time, I’ll probably add some veggies like sauteed spinach or onions & peppers.  Give it a whirl, I promise you’ll enjoy it!

Well, I was a little hungry despite my pretty big lunch, so Bill and I decided to make quesadillas… I borrowed the technique on the Gliding Calm blog and it was really great!!! I have made the quesadillas on the Foreman grill before, but making them on the stove was so much better just because it was so much crispier! I added about 1/4 cup of 2% Mexican cheese to a whole wheat (Ortega brand) tortilla, and about 1/2 cup of black beans… It was so good and reminded me exactly of this place called Moe’s that we love to go to… we had my own personal creation on the side that I came up with back in November… salsa brown rice… since all the prepackaged rices have so much sodium in them (as well as calories/fat), I came up with the idea (maybe someone else has too!) to just buy regular brown rice (we used Uncle Ben’s) and mix in a couple tablespoons of salsa… It is fantastic and you’d never know the different, honestly, you get more flavor, I think… It was a delicious dinner and hit the spot!
