Spicy Eggs With A Twist

Two weeks ago I received a coupon to check out one of Sabra’s new products… I had seen the buffalo hummus floating around on blogworld, but unfortunately my grocery store didn’t carry it; however, I did find something that piqued my interest… supremely spicy hummus!

I LOVE spicy foods.  I really wanted to test this out in an unusual way since it is sort of an unusual flavor :)   However at the same time, I was really craving eggs and usually add lots of red pepper flakes and ground pepper to my eggs so I decided to mix the two.

I simply pan fried two eggs and flipped them.

And then when they were ready, instead of adding my normal slice of cheese, I added a generous smear (probably around 1 Tbsp) of Sabra’s supremely spicy hummus.

I left it on the hot pan for about 30 seconds.  This allowed the hummus to melt and become even more creamy on top.

The end result was delish.  I loved the creaminess of the hummus on top of the eggs, it was a different texture than I am used to and a nice change!  The flavor however was the true kicker.  The hummus is pretty spicy and bold, but not “make your eyes water” bold, which makes it pretty versatile for incorporating into a variety of dishes.  Another unusual hummus creation that I’ve dabbled in involve hummus pizza ~ using hummus as a sauce instead of traditional tomato sauce ~ and I think using this flavor would work perfectly and save me from adding a variety of spices to the finished product!

The only downside is that I wish I could have found the buffalo style hummus – my eyes are peeled!
